  • ►INGREDIENTS:
    400 grams Squash, grated
    2 carrots, grated
    2 onions, sliced
    1 cup flour
    1 cup cornstarch
    1/2 tbsp baking powder
    1/2 tbsp salt
    1/2 tbsp pepper
    1 shrimp cube, grated (optional)
    1 egg
    cooking oil for frying
    ►PROCEDURE:
    1. In a mixing bowl, mix the flour, cornstarch, baking powder, salt, pepper and shrimp cube.
    2. Add the onions and grated squash, carrot and egg.
    3. Mix very well.
    4. Heat cooking oil in a pan enough to deep fry the okoy.
    5. Scoop about 1/3 cup of the mixture, flatten and fry until golden brown (about 2-3 minutes each side) in medium fire.
    6. Drain excess oiland serve with vinegar.
