- This ukoy is just pure deep-fried deliciousness-- don't forget the spiced vinegar!
Recipe:
Dip
• 1 big red chili, thinly sliced
• 2 garlic clove, finely chopped
• 3 tablespoons chopped red onion
• 1/3 cup coconut vinegar
• 2 tbsp soy sauce
Ukoy/Okoy
• 1 medium sweet potato
• 1 cup Squash
• 1 carrot
- 1 red onion
• ¾ cup ice cold water
• 1 teaspoon fish sauce
• 1 cup cornstarch (add up to ½ cup more if needed)
• 16 shelled and deveined shrimp
• 2 bunches of chives

I made Ukoy today and I followed your recipe using peeled prawns. I tried similar Ukoy ages ago who made by the Aussie chef who lives in the Philippines. My husband really like it and he tweeted the photo of my Ukoy on twitter. I might going to share your video because someone is asking for the recipes. Thank you so much this version is absolutely something I can make and eat often.
The best ukoy I have ever had was made almost entirely of very small shrimp - just a bit larger than krill shrimp used for bagoong. It was super crispy and delicious.

Much respect for doing this recipe man. Born and raised in the states this was something I really missed about the Philippines and although I can find it here in America Southern California specifically... Always wanted to do my own version cuz I felt like I can do it way better.
Interesting enough, I find that here in America we're always trying to be authentic as possible reaching out for the motherland. While those in the motherland are reaching above and beyond. It's how we keep in touch with our roots. But it also stagnates progress. Glad to see in the last five years more and more up-and-coming Young folks doing food here. There are some great places sadly the pandemic has also closed some of very best nuevo pinoy joints... I guess there's just little progress without our times. We will progress once again and I'm glad to see you too are doing your thing moving forward. much respect to you my guy. If ever in SoCal hit me.
This version is very "sosyal" looking OKOY. In Visayas, we only use harina and egg as a mixture. Pero your version is healthier and delicious. 😋 We have two kinds of Okoy: The bolinao and pasayan. hehehe
In my area, we have tugnos (smaller than bolinao) okoy.. Love all of them.
Hahaha right.i think the veggies are also cut too big, and more shrimps the merrier. 😁
What’s the difference
What are the visayan vegetables and batter made of? I’ve seen so many versions from cornstarch, AP flour, baking powder, egg, no egg.annatto color, shelled shrimp, chopped shrimp, tempura mix. I watched who inspired Erwan and very similar with tweaks like water vs soda water and AP Flour. So what are the differences with the visayan style ukoy? Please educate me. 🙏😀
@@Islandcandies5963 I am not highly adept in cooking lol. Btw, there's no drastic difference it's just that the Visayan version doesn't have much of that veggies or we don't put veggies at all to enjoy the goodness of purely eating the fish or the shrimp.

BRAVO! Tried this yesterday because we had some snow storm here in NYC. Couple of changes I made, I added little bean sprouts & a little more slurry and everything else the same even the sauce. Came out perfect! This will be my go to ukoy recipe from now on. So much better & less greasy than what I grew up with.😋😋

Naisu! Pinoy OKOYnomiyaki, you can add literally anything to it, the one I grew up eating has lots of mung bean sprouts (toge) then flour and eggs as binder and most probably seasoned with fish sauce and black pepper.
Finally! Someone's doing it without shells...I thought of this a thousand times 😂😂😂.
The thing about cooking is that you don’t have to do the same thing as everybody else. Experiment. I do that all the time. Too bad though I cannot cook and eat ukoy I am allergic to shrimps.

@@denniszenanywhere, I don't know if you can still call it Ukoy but I don't put shimps. I also add Papaya strips to it because I love Papaya. I'm also allergic to shimps so I prefer doing it my way~

Best okoy recipe I've tried! Made some today, and salting the veggies really makes a huge difference. They were crispier compared to the others I've tried.

during high school days..one of our neighbor is selling ukoy..she uses small.shrimps and.very sticky slurry.togther with.some vegetables..then she formed it into small balls..but bigger than fish balls..its so delicious and everybody in the neigborhood love it. but i will also try the version of.mr ewan..tnx..... new subscriber here
..this version I will sure try..kasi Okoy is also one of my fave I just can't eat the head and tail of the shrimps..so I prefer the small white shrimp (Dulong, we call it to make as okoy) and yes, agree to that oily and gooey (or maharina masyadong) batter haha..just cant make it perfect..let me experiment on this one..🤗

I think I would love this version of ukoy more than the traditional version of ukoy. I don’t think I’ve had very good ukoy in the past it’s usually realy doughy or greasy from all the oil. I’ve tried another version in Vigan where it was like a shrimp chip ☹️. I definitely wanna try making this recipe 😋.

Yes! Ukoy was such a hit or miss growing up. It was either made really well or not. No such thing as a mediocre ukoy because a mediocre one was just as bad as the badly cooked ones. And it should be eaten right after cooking. Will cook this tomorrow for dinner!

I made these today for our dinner. I used sweet onions instead. I forgot to buy chives so I alternate it with green onions. 😆 It's a winner! Really delicious and crispy. My picky eater kids loved them! For real! 😋👍

as far i remember the other term used in that dish was also dulong which using the little shrimp you was talking about using some flour , seasoning and veggies to cook it as well as you do as your version of yourself of that dish because the okoy i remember was selling on our area or street was made of a ball which can be bought in affordable price because it only had less ingredient where they doesn't put shrimp anymore just a flour seasoning and some veggies which i could compare in takoyaki in japan but in filipino way where instead of putting some meat they season some flavored mix which show how sometimes pinoy used to be resourceful and could i say practical in life to get survive specially during this time were still on the crisis of pandemic and typhoon that was it peace out,keep safe and God bless brother together with miss anne your family and your angel dhalia if i was good how i does i spell the name of your little angel 😊

@erwan in Pampanga there are other version. They used unripe papaya, manioc and squash. Then they use flour as their "tapong" (they put it when they fry the okay). Try it. It is so good. Thanks! But your version look so good too, we gonna try it too. Keep safe😊
