    The first kind of latte art we're going to talk about today is free pour. Again, this is like the working barista's type of latte art. You're pouring it as you're making drinks for customers. It takes no more time to pour a free pour design than it would be to pour a drink without latte art.
    Here's some basic quality benchmarks we're going to talk about. Again, we mentioned the really nicely textured milk. We want to see a nice, crisp white design without any beige. Nice and centered in the cup. These are things we value in free pour latte art.
    Let's show you some good and some bad examples of these things, and then we'll move onto actually pouring some designs.
    Again, an appropriate amount of milk in the cup.
    First things first. I'm going to swirl my crema just to make a nice even pallet, and swirl the milk. This the first lesson we want to learn. You want to have nice, really finely textured milk before you begin. If we don't, it'll just never wind up being the way you want it to look. I'm just going to start with a basic dot in the cup with milk that isn't quite as good.
    Here, we can see see a lot of pock marks and a lot of visible bubbles. The edges aren't very crisp. There's a lot of dots and speckles here. This milk isn't terrible, but it's not quite as good as it could be. We're going to make sure we're a little better than this when we start to pour our designs.
    We have our milk right for this one, but I'm going to show what happens when you get more beige and less of that crisp white. You only get that nice, crisp white latte art when you're about this close from the spout of the pitcher to the liquid in the cup. We tilt the cup so we can get as close as we want, as soon as we want. If I don't, you'll see how no matter how low I get the pitcher, you get a lot of that beige before the white eventually pops out.
    All this stuff around the edge you want to get rid of, and we do that by tilting the cup and getting really close with the spout to the liquid in the cup. Once you have great milk quality, and you can tilt the cup, we'll get that nice crisp design were looking for.
    I'm going to pour from slightly higher. Fill the cup up about half way and drop down to let the foam spill out into the middle. Here, we have a nice centered dot. Crisp and white with great foam quality.
    All the free pour designs we poured today will involve these principles. We're going to have great milk. We're going to get right down, really close to the surface of the liquid in the cup with the pitcher before we even begin pouring. That's going to bring all these designs into this really nice, centered crisp area where you want them.

    The tricky part even after you steam perfect milk, is the TILT of the cup. The gradual leveling and keeping the pitcher still is the trick and took me forever to get it right! After you learn that, it gets easier. I wish the "How To" videos would address THAT because it is vital to the way the foam builds the layers and ripples! It is tougher than it looks!

    So no one thought to have a birds eye view when filming this? How are we supposed to see 60% of what this guy is doing when it's being covered by the sides of the cup?

      Who knows. I think most people filming don't understand it and just do their job as best as they can.

    Oh no wonder. I always wondered why do baristas tilt the cup towards the milk pitcher. Latte arts are so beautiful. I really enjoy seeing different kind of latte arts. When my machine arrives I can be a barista and create my own arts. Can't wait because life is too short. Gotta do what you want to do. Thanks for the how to tutorial. Cool! 😍🐱🍀🍁

    Something that I rarely see anyone talk about when it comes to latte art is your level of crema on your espresso shot. You CANNOT pour latte art without at least some layer of crema on top, and this comes from a good pull of espresso (grind size, pressure, temp, brew time, etc.). May seem obvious to most but I think it warrants an explicit mention right at the outset since this is a critical ingredient to latte art. Other than that, he kept it nice and simple. Good short tutorial.

    I did a perfect cappucino first time round and now I can't seem to get anything right, the annoying thing about youtube tutorials is that you cant see exactly what the milk looks like when they're preparing it

      A latte would have a creamier, wetter milk, just like wet paint. And a cappuccino has more dry foam on top. :)

    Nice vid. Any recommendations on the style of spout used for free pour? Also I've always been told not to "break the cremer" but it seems your technique of swirling first debunks that.

    Why do people act like latte art is insanely hard? If you have a cheaper machine (like me) only use your steam wand to heat you milk then (drum roll please) USE A FRENCH PRESS, it makes just as good or maybe even better micro foam than the rocket machines I use at work (I’m a barista)
    Just add air by only pushing the strainer from the top of the milk to about an inch under the top, then after a few times doing that (7-9) go to the mid to bottom of the press over and over till you see only a few bubbles on top, then tap the French press on your counter top a few times and swirl it around till the bubbles disappear, and VOIS LA, you have perfectly frothed milk, then just use this guys method and you can make a very good latte or flat white heart!

    I just can't do it... my Breville 870XL seems incapable of getting the milk right for any latte art... I have tried all types of milk, all temperatures between 120 - 170F and the milk just mixes with the coffee. I get a nice espresso shot with tons of crema, yet I just can't do it... I literally think that my machine just can't steam the milk properly. I have seen gazillion videos on how froth the milk just right, etc... that is more frustrating than golf...

    It seems like in every clip i've seen of latte art tutorials has this specific latte cup. Can someone please tell me what kind of cup or brand of cup this is???

      there's no specific cup. any cup, ceramic or paper works. most people prefer thier cafes cups because it's what they're used to.

      you just have to keep heating the milk on the stove. you have to keep letting the milk foam rise, but in low-medium heat. when you start heating the milk start with low heat then slowly to medium heat for 5- 8 mins, as you heat the milk constantly stir it slowly.

      You have to steam your milk in a right way, steaming until you feel hot at the bottom of your milk up then stop

      I just tried that and it does work much better, I just can't get a good micro-foam going. It always starts pouring velvety and then is overwhelmed with too much foam.

      Randall Schoverling It seems like you steaming quite long as it should not be. The more you steam the more foam will be generated as well as air bubble. As I said, right at the time you feel hot in the hand that holding the milk cup then you stop steaming then you knock down the milk cup a few times to remove the air bubbles, then swing a lil' bit also to kill air bubble. Btw, you should search RUclips for "steaming milk for latte or cappcuccino". Or if you are using thermal meter for it, it should be around between 60oC and 70 C. Goodluck bro!!! Love from Hanoi.

      I think I've been making cappuccino foam and not latte micro-foam all along! I got my first heart this morning; i've learned to dip the steaming wand inside the milk at the very end of "chirp" whirlpool.

      So i've gotten a lot better in the recent weeks. I burr-grind my beans (local roaster) by hand in a Sozen grinder and tamp @ 30 lbs pressure. The main thing i've learned is to affix a thermometer to carafe and chill in the freezer until ready to steam.
      I pull shots first (Delonghi Kmix machine) and steam immediately afterwards. Routine is to Introduce tip to milk and create volume (5-7 sec.), then submerge the wand a little deeper until air hole is "surfing" @ level with milk until 100F, THEN sink wand at a slight angle to roll-whirlpool bubbles ("folding") up to 145-150F. I have finally achieved microfoam! Now the only problem is my pouring technique. I can't get the microfoam to "break through" the crema - it just spreads wildly on top. The exact opposite problem of what I was having before .

    sorry but this video is full with flaws,
    1. telling us we need perfect quality milk, SHOW US HOW TO STEAM IT
    2. the last latte with the so called perfect milk, i see lots of visible bubbles around the heart... not how its supposed to be?
    3. no close-ups, cant see anything

      +Jun Nagels seeing the milk doesn't help, from personal experience. You just have to listen to how he describes it and listen for that "paper tearing" sound. And yeah, practice is what really makes a difference.

      You won't be able to distinguish the white from the white in milk anyway, if they've filmed it. If you want to be able to see, learn in person. Learning the sound really does make a difference.

    Its easy if you have good espresso machine. If your milk wont be steamed well, for microfoam you will not be able to create good art. :< I have amazing machine but idk what happend to it... It stopped producing crema ;

    I'm looking for the perfect machine to make a coffee I enjoy and look forward to. Then I would love to be able to do latte art. However to get the best coffee from your beans and the best steamer and indeed latte art, you need to spend about £/$2000 on a machine.

    Never new that you had to tilt the cup. Then again, it's not like my boss even knows the first thing about coffee, it seems. Our machine doesn't seem to be very well adjusted either. Oh well!
    Handy tip for someone who doesn't have that much experience with latte art.
