Hey Bumbi, what a wholesome stew, perfect for winters . I think I can also add purple yam and raw banana to the stew. This recipe reminded me a little bit of Undhiyu ( it is also usually cooked during winters and all seasonal veggies are added in it). Will definitely try it and give you a feedback. When do I add it? - Can I also use leafy greens (like swiss chard, pak choi) and when should I add them? Thank you so much! Can't wait to make it...
I used canned beans. You can also use dry beans. Soak a cup of beans overnight adding salt to the water. Next day discard that salty water, rinse the beans with fresh water, add water to it and cook in a pot on medium heat. Cook it till it turns tender. The cooking time varies depending what type of beans you use. Red kidney beans take about 45 mins to an hour to get cooked. Add leafy greens when adding coconut milk.

Yes you are right, it is a comfort food. I make this all round the year and use seasonal vegetables.
