After reading the comments about biryani not made this way or that way, let me clarify that biryani is not made in just one particular way. It is made in millions of ways. It is of south asian /middle eastern/ central asian origin closely relateled to the pulao. I used to eat a lot of it when I was in Mauritius. My mother learned to cook the 'dum' version of it which is cooked raw. She learned it from our muslim neighbour. Then I lived in India for 5 long years and of course I searched for the 'mauritian' biryani style all over India and never found anything even close to it. Then one day in Paris I ate at a Bangladeshi restaurant and there it was ! They call it 'kacha' biryani that is raw. They use potato in it, while in India they don't cook with potato. It is close to the mauritian one but still does not reach its tastiness level. So I guess the mauritian one is a Bengali import with many more innovations added to it in Mauritius. And yes, the Bengalis put a lot of potatoes in their curries. And yes, even a Pakistani guy here in Paris told me , that nothing beats the Mauritian biryani :). Greetings from Paris.

Seems yummy Next time fry your onions first then you start all the other steps it will be much easier And also cook your rice a little less and when you finish the layering let in simmer a few minutes it will taste better and rice will cook fully
