Hi JC, I love beets but never knew the greens were eatable. Can't wait to try some next year. Thanks for your wealth of knowledge in a lot of areas that you share. Have a great day and keep living the dream!
I started growing beet greens last year when I found a bundle of organic beetroot (tops had been cut off) on offer at my local supermarket. I planted the roots in pots on my windowsill and they just keep growing! despite being harvested regularly...I now keep a regular look- out for the organic bargain beets and have them in pots all over my apartment. Best veg ever and full of potassium
Beet Greens bring back some memories from my childhood, I forgot how great tasting they are! I didn't realize they could be harvested that way, I will surely be adding them to my garden next year, thanks for sharing!
+Josh Smith I didn't know this either until I experimented with them. Been clipping them since spring and still clipping cause the greens are under hoops.
J.C. I like that you took the time to reach out to those who you are unable to reply to and let them know you read their comments! it shows your character and the type of person you are! That attitude is in part what makes your vids some i eagerly watch for and enjoy spending time watching. Beet greens and turnip greens were a part of what I grew up on. Fry up some bacon and stir the greens in with some spices and serve with beans and corn bread! Brings back memories for sure....
Another great how to video... Can't wait to apply these awesome teaching tools next year for my own use... Also wanted to encourage you about hitting your goal for 50,000 thousand subscribers ( already zeroing in on 30,000 !!! )... I must admit your cabin videos are my favorite but you seem to have a magical touch to draw us into anything you do... You almost could change your name to teacher of the swamp... We all are eager to find our sit by the campfire to be taught by the master... ;)
+Mary Wagner Awe thank you Mary. Another smile put on by my subscribers :-))When I'm done harvesting food and firewood I'll be back at the cabin and looking forward to it. All the best to you :-)
I've never in my life ate a beet green and now find myself craving them! Another great video Boss. I have my mother and some cousins watching your channel too now!
J.C., You are considered "Top entertainment" here at my home! Thanks, again, for your good natured, excellent videos about so many educational subjects. For me seeing someone doing a project is an easy way to learn how for myself. You are so appreciated! God bless you. Barb
+2bonosc It made me happy to see your comment because I know how you feel. I always want to comment and say how amazing these videos are, even if I have nothing in particular to say. He is just that good and giving.
I started watching your vids a couple of weeks ago. I can honestly say your videos have inspired me to start working torwards the simple life. I'm just like the people you talk about going to work everyday to make a living. In my case, the life that I've chosen constantly keeps me behind, leading to stressing out how to pay the bills. There comes a time where a man has to take a step back and reevaluate his situation. Well, it's that time for me now. I have a lot of decisions to make for my family and I. Thanks again for the videos. Looking forward to many more.
+abernathy329 My life is in a constant state of reevaluation and change. I employ the live and learn theory and stick to it. I will be doing follow up videos on this subject that you may find beneficial. All the best to you.
My grandmother was born in 1889 and when I was a little kid told me that girls used to slice a beet and dab it across their cheeks to give them rosy cheeks. She made the absolute best pickled baby beets ever. I love beets.
My late father-in-law grew best greens in old barrels like you. In the fall, after all were harvested he would throw the contents of his rabbit butches in the barrels. Turn over the soil in the spring and the plants would just shoot up. I really enjoy you channel. Thanks
Tried this method this year along with the deep mulch that you showed. Had an amazing garden this year with very little maintenance and tons of wonderful beet greens. Thanks for the great tips ... always look forward to your videos.
I love beets, but never have tried the greens. I am not fond of cooked spinach so have steered away from them. Because of all the nutritional value I am going to give them a try next year. Here in Wisconsin we do not have the grace of a second growing season. I have learned so much from your channel. Thank-you for sharing all the things we have overlooked that Mother Nature can provide for us with. It is the simple things that life has to offer. I have always reused, reinvented and recycled before throwing something out. But I do not want a homestead the quickly turns into a city dump, like I have seen so many here on RUclips become. Your homestead and cabins are so neat and clean, truly a joy to watch your adventures.
+Sherry Woyczik I hear ya on the "trash collecting" :-D I don't want that either.Throwing a little of the cooked greens into other recipes is a good way to utilize them and benefit from their nutritional value. Cheers :-)
I just had surgery yesterday so I'm confined to the couch which I'm not used too. Bucko knows something is up and is trying to comfort me the best he knows how. Anyhow, I've been kinda binge watching your videos and have made some notes and brainstorming about a little garden I'm going to put in this spring. Thanks for all the ideas and great videos. keep up the good work!
I'm impressed. . .I thought I was the only person who ate beet greens. Been eating them all my life except for my Navy stint. Thanks to my little old Italian Grannie, that woman could cook anything. I have mine with a splash of vinegar and olive oil and just a sprinkle of seasoned bread crumbs. Can't wait for fresh produce this summer. Awesome videos man, I must have watch at least twenty or so last night. My wife asked me if I was going to go to bed . . . ha ha ha Summer's coming I'll have to give it a little break. Ciao my friend. By the way I'm gonna start steaming my beet greens.
Turnip greens, slightly bitter, simply delicious. In my country, Portugal, not only are very sought after, but getting relatively expensive in the farmers markets. Several ways to do it. One of my favorites Arroz de grelos (greens rice). Esparregado (I think it's called mashed greens or creamy greens in English). With a bit of garlic and olive oil. In Portugal "everything" takes olive oil. LOL :-) It's to die for. Can also be done with spinach or less common carrot greens and several other. But turnip greens is by far my favorite. Worth checking. ;-) Cheers
Can't say it enough J.C. I truly appreciate the work you do. I am plowing through all of your material because I enjoy it so much. You have inspired me to think differently about my approach to life. I have to take serious baby steps. But my plan for 2018 is to be consistently working on ways to simplify my life. Thank you for what you do. May God bless you and lead you.
Hey Jim, the first memory I have of eating beet greens was in the early 70s when my mother would make them and serve them with white vinegar . I loved them then and I love them now. In the fall she would make beet pickles with apple cider vinegar , the whole house smelled so good. I haven't thought about that in a long time. Thanks for the memories and for another great vid. Take care my friend.
I found your channel about a week ago and must say I'm hooked watched most of your videos love the dog very intelligent and very well behaved and I've learned a lot thanks for the update from here in the uk stay safe
Great salad too they even sell at grocery store as "spring mix" which I had to iceberg for my own salad mix. I go further and use lemon and olive oil as a dressing yum
my wife and i love watching your channel . hope you don't mind i mentioned you in one of my you tube videos .electricity for an off grid cabin and also off grid budget build cabin john smith.thanks for all the high quality and informitive videos keep up the good work
I grew up watching my mother eating beet tops and many other strange to me things and refusing to eat them myself and now 40 years later I'm watching a video and looking forward to trying haha- thx Boss
HEY 👍👍. JUST came across your channel. WOW doesn’t come close. I lost my house in the middle of the night from an electrical fire. Forced into an apartment 😢 I became terribly depressed, couldn’t even see the stars 😪 My house is way off the road, woods woods and more woods ♥️ a brook with trout, just THE BEST - about 3 miles from town ( I use to walk down, do my errands, cab back. ) I can’t do it now though 🥴. I have a few gardens, managing to cut way down on my grocery bill- my dog went to heet, and I said I’d bring her home here and tent for those weeks - yard maintenance and planting the gardens would be just what the Dr ordered… my son said he didn’t like me in a tent, in the woods with my husky in heet AND the coywolves that lurk around SO I bought a small camper. 1964 Glendale … THAT was 2022 😄😁. Yep… still here. It’s HOME I’m no longer depressed OR is my dog and managed the winter fine ( though it was a mild winter ) My parents always said I was an old soul- I live very basic, living simple so I can simply live 👍. Terrified of black bears though and I KNOW she had twins this year 😯. Anyway LOVE your channel JUST subscribed and am burning midnight oil on your play list. GOD BLESS 🥰🙏
Great comment Kate and thanks for taking the time to post it. Thanks for subbing also. My home burned to the ground back in 05 so I know what you're saying. Many blessings to you :-))
What a great video Boss. As I continue to watch your garden videos, I really appreciate the time you take to not only show the harvest, but how to prepare the harvest for meals, and the different dishes you make. The omelet recipe sounds fantastic! Thank you again for your efforts and God Bless you my friend.
yeppers...started learning such things just in past couple of years and surprised how good and easy. I never gardened before and now we eat good and it is beautiful too. empowering isn't i. Never too late. I am sixty
Love this video, like all the videos. I or we all learn so much form you. Hope when you move to your other cabin you will have a garden. You can film any thing its all good watching and vary relaxing thank you ,thank you, pet Frankie for me, love that dog. I have a small dog she is a sweetie, she is 12 yrs old, my pal. God Bless and thanks
Boss, I also used composted grass clippings this year for the first time to grow my potatoes. Just filled empty 15kg dog food bags as containers, planted my seed potatoes from last season and had gorgeous potatoes, and all for free. Most satisfying. Most definitely will be using grass clippings from now on.
Well this sure BEETS what I've been doing up till now. You are a great beet green harvesting advocate, of that there is no doubt. Some great ideas here, and nice video as usual, thank you.
reminded me of how my grandfather grew beets/beet greens. Like you and I the greens were his favorites as well... right down to the butter and salt! thanks for sharing.
"Finally!" the beet Green Secret! You spoke about Beet Greens, but how do you eat them? Many people have asked. I love beets but never eat the greens. So, steam or saute is the way to go. They must be very good. I am still learning, and realize growing root vegetables is as important as tomatoes and peppers. My garden is expanding to except more variety. I'm still learning! One Zucchini plant is way plenty for one person! Please no more zucchini! Thanks again for the info on the Beet Greens. I am starting to homestead but from the city, their is a learning curve... but i am very creative and well read... Thanks again for your video's and help... God Bless and love to Frankie
Thanks again JC for sharing some words of wisdom. I gotta tell ya and its a bit off subject, but I just picked up a really nice old cast iron skillet at a yard sale. Funny thing is she didn't have out for sale I just pulled in asked. She said she had an old pan but it was rusty and wasn't sure how to get it like new again so I told her about your channel and the process you use and how I've tried it with great success on a pan I had. Somewhere in the conversation she must have seen how much I enjoy restoring things and she says well if you want it you can have it for four dollars ! Needless to say I took it home and now I'm starting to give it new life. Thanks again for sharing your vids and God bless. Travis Tannehill.
+Travis Tannehill That's awesome buddy. I got my best deals by asking at yard sales too. I bought 2 Wagners and Griswold once for 10 bucks for all 3. I asked if they had any cast iron and they brought these out to show me. I should have traded them a Teflon lmao :-D
+thebossoftheswamp I keep trying to respond to your new videos and they are not going through. I hit "post" and they don't post. Anyway, Congrats on your dream fulfillment. No feelings in the world quite like it. Cheers .
morning, Boss & Lil-Frankie; Another Great Installment of the How-2-S. Chickeys were HUNGRY, Almost Lost Yer Fingers, 2 funny. Thanks again 4 sharing with us here, Friends !...Happy Trails From The Maritimes In Canada...ATB Terry....God Bless
Hi boss. just subbed your channel and have spent several hours viewing the past episodes. Love your cabins and homestead as well. Your simple approach to life is admirable and refreshing to see someone really doing it. This vid brings back great memories from my childhood because my mom cooked beet greens and also the beets as well. I enjoyed both. Looking forward to seeing your progress as you move to your cabins and kicking back in nature. Best of luck JC.
JC once again yours is the best video of the week/month I watch. I see the value of the material the floating seed trays are made from and will have some on in house next spring. Several seasons ago a WWOOFer inadvertently introduced us to brussel sprout greens and we have been eating them weekly since.I'll bet Frankie is off herding the 2 dz. tennie balls that arrived during the last video.Again thanks for my new favorite video yours I watch over and over and learn something new every time.
Good ideas here; I'll give this a go. The young, tender greens seem to be what you were picking. Makes a lot of sense, since they'll keep growing back. Thanks for this very helpful video for us gardeners.
I love the idea of the blue containers your using to grow your beets in, but I really think those containers need the same paint job you gave to your canoe......
Love this one also. . Beet greens are the best. . I eat them raw or put them in the juicer. Thank you for sharing your tips and tricks. I grow my greens indoors thru the winter as well (under lights of course) Its another way to superior health, simply. Very best good wishes
+Christine Beauchamp I've got an experiment going with them. I cut the greens just after Christmas and never pulled the beet. I mulched them over and wondering if they'll just keep on producing greens in the spring. We'll see.
Hi JC.. I enjoy your video. I love beets and greens too but I don't have a beautiful garden like yours, here in Rome. But back home, I have lot big ancestors agricultural land. I wish one day I will make a nice garden like yours and harvest nice stuff. Thanks for making another nice video and waiting for next one. salute Frankie
Thanks for showing the simple techniques you use. It is so helpful for me learn by watching.. reading all day doesn't do what few minutes of watching does. Super excited for next year! I may try a few in a winter garden in the house!
You keep on making these great videos and we'll keep watching them, man. I recommend trying pea and garlic shoots. Plant both any time and harvest while tender, about 6 inches tall. Great in many recipes. You won't get successive harvest but so easy to do.
Love beets! I have beet juice every morning. Putting the leaves into soup is a great idea. I put spinach in everything and now I will try beet greens as well :) Thanks JC....looking forward to more NH videos. Be well down there xo
+Northern Lassie I use the greens everywhere I use spinach. They are very much alike in flavor and super nutritious. Super easy to grow too.Always nice to hear from you my friend :-))
Great tips and advice JC! Something I will try next year! Without people like you sharing these particulars, we would not learn or take the next step to try something new that many of us are hesitant! Thanks for sharing JC, awesome video!
I just found you and subscribed. My husband and I love beets. We cook them and the first day add olive oil and sea salt or regular salt and then the following day add balsamic vinegar and eat them cold. But, I was so interested in the greens because I always eat the greens when I buy them. This is the first year I have planted them and they came up...next year I won't sow directly in the soil. I knew the greens were super nutritious...but u really showed how much. Last year our garden in WV did nothing. We used to have five huge gardens..the last few years maybe has been too hot and I could not even get a good tomato. Wish me luck.
A lot of gardens did horrible last year. This year most of my garden looks good except my squash. Every variety looks sickly. I'll show this in a video soon.
Hi JC, I love beets but never knew the greens were eatable. Can't wait to try some next year. Thanks for your wealth of knowledge in a lot of areas that you share. Have a great day and keep living the dream!
+Greg H. Yep, the greens carry more nutrition than the beet itself. Enjoy :-)
every time I watch one of your videos I learn something. Thanks for helping teach the next generation! You are AWESOME!
+Corey Wells Awe thanks Corey :-)
I started growing beet greens last year when I found a bundle of organic beetroot (tops had been cut off) on offer at my local supermarket. I planted the roots in pots on my windowsill and they just keep growing! despite being harvested regularly...I now keep a regular look- out for the organic bargain beets and have them in pots all over my apartment. Best veg ever and full of potassium
Thanks again JC for the great videos! Still catching up on all your videos!!! Love your lifestyle, and wish you and Frankie the best!!!
You never stop producing a great show whatever you are doing !
Thanks
+goose2die4 Thank you buddy. Glad you feel that way :-)
So glad you included preparing as well as growing the greens, thanks for sharing all this great information.Jimmy
+Daone NOnly Bacon and cornbread goes with everything. Love the stuff. Thanks for the kinds words. All the best.
JC, it's great seeing you're doing well. thanks for the videos! makes me feel really comforted.
+mhendu07 Thank you kindly :-)
that bowl of greens reminds me of the canned spinach I used to love as a kid. little lemon pepper and salt... mmmMMMmmm!!!
ohhhhhhhhh lemon pepper... I will try that... I usually give a splash of balsamic vinegar...
Beautiful food from Gods table.
+ChileExpatFamily Couldn't of said it better myself. :-)

Beet greens are awesome in so many ways. I like the vinegar too. I'm starting to like Swiss Chard even more than beet greens :-)
Add some dandelion greens and spinach and you got yourself a super salad. Stay healthy my friend.
+Honeymoon Homestead I really need to develop a taste for dandelion. I never liked them but I know they are very nutritious.
Some oil & Vinegar a few herbs & spices and Bob's yer uncle. Makes just about any veggie taste better.

+Ray McKibbin Never thought of using dog food bags but that's a great idea. Thanks for sharing that.
Great video JC. I never knew about beet greens. Thx.
+Carolina Prepper They're easy and awesome. Nice combo.
Well this sure BEETS what I've been doing up till now. You are a great beet green harvesting advocate, of that there is no doubt. Some great ideas here, and nice video as usual, thank you.
+E. Lectricity Thank you my friend. All the best.
reminded me of how my grandfather grew beets/beet greens. Like you and I the greens were his favorites as well... right down to the butter and salt! thanks for sharing.
+Steven.C. WHHI Can't beat butter and salt :-)
Thanks for sharing your wonderful videos 😊😊❤️
My pleasure :-))
+CitySlicker Tony There's always a learning curve. I experiment and learn from them. Always learning here too buddy. Cheers :-)
I eat them raw in a salad love my greens. Really enjoy chanel keep it and looking forward to my growing season here in australia
+jim I add the young leaves to my salads too. Good stuff.
have loved every video....im an outdoorsman working towards what you have already accomplished. keep up the good work. your livin the dream...yessir
+Brad Mitchell Best of luck with your plans.
Looks like your having a great harvest!! You the man!!!!LOL
+rodney newbury Awesome garden this year buddy. It's keeping me busy for sure.
I love my beet greens sauteed with olive oil and a little garlic salt.....always love your videos!
+Amy Knox Never tried adding garlic but I should... I garlic everything else :-)Cheers :-)
+thebossoftheswamp It's so good! I saute most of my vegetables.....okra is especially yummy this way
Opened this morning in middle Tennessee on Dale Hollow Lake
Not one for beets but will try this approach next season . All the best and give frankie a cookie.
+Ronald Edwards The greens are a lot like spinach.
Man, I enjoy these videos...thanks for sharing..
+Jack Meeks Happy to hear that. Thank you.
BRILLIANT INFO, MICK FROM UK
I'm already making plans to do this next year. Thanks, Boss.
+Gardening With Puppies You won't regret it. My beets are under a hoop and I'm still harvesting greens :-)
+thebossoftheswamp I keep trying to respond to your new videos and they are not going through. I hit "post" and they don't post. Anyway, Congrats on your dream fulfillment. No feelings in the world quite like it. Cheers .

+T.W. Milburn (skillet210) Blessings to you to my friend. Cheers :-)
Another great video JC, thanks!
this is so inspiring to see!
Reminds me of my Grannies homemade pickled beets. I could eat the whole jar by my self. I'll have to try the greens now.
+dub yah The greens are great :-)
Great vid ! Smart gardening too. Best channel on you tube.
+john hightower Thank you John. All the best to you :-)
Thanks! I planted some beet greens in our fall garden this year and their coming up nicely. Had some in a salad tonight.
+Bronco56 Excellent. Mine are ready to cut again already.
This was the first video I have watched of yours and it was SUPER informative!! Thanks so much for posting this. Very well done!
Thanks for commenting Natalie. Lots of videos on my channel that I think you'll enjoy
Yes there are! I have already watched so many!! Great content and very entertaining. Thanks!!
Im going to have to try this, thank you
Thanks boss man. been doing the beet green thing ever since I seen this video. Love them
Mmmmm! The greens look delicious! Love all your cooking videos especially outdoor cooking!
Gonna try growing beets in containers next spring.....Thanks for the inspiration!
You may want to consider building them a small greenhouse covering so you harvest a bit during the winter?
Your raised garden containers was very best. Great idea for recycling plastic barrels and save a tree. Your the best. :~)
Thank you
Love my beet greens !!!! thanks boss , another great video !
+PhattDawg Trapping Me too buddy. Good eats :-)
Hi boss. just subbed your channel and have spent several hours viewing the past episodes.
One of my favorites!
+Steven.C. WHHI :-))
Thanks, learn so much watching your video's
+Gene Reeves Happy to hear that. Thanks.
great video love beets never thought of eating the greens
+mark perrault The greens are the best part :-))
JC once again yours is the best video of the week/month I watch. I see the value of the material the floating seed trays are made from and will have some on in house next spring. Several seasons ago a WWOOFer inadvertently introduced us to brussel sprout greens and we have been eating them weekly since.I'll bet Frankie is off herding the 2 dz. tennie balls that arrived during the last video.Again thanks for my new favorite video yours I watch over and over and learn something new every time.
+Holly Laughter Frankie's busy with the tennys for sure. Glad you're enjoying my channel Holly. Thank you.
Good ideas here; I'll give this a go. The young, tender greens seem to be what you were picking. Makes a lot of sense, since they'll keep growing back. Thanks for this very helpful video for us gardeners.
+Fran L I don't let them get too tall. I harvest at least once per week. They already need to be cut again.
I love the idea of the blue containers your using to grow your beets in, but I really think those containers need the same paint job you gave to your canoe......
+Jerry Pelletier If the paint would stay on them I'd certainly do that. I can't stand the color blue :-/
+Amit Sharma I hope you get to enjoy that too. It's very rewarding and satisfying. Thanks again for your kind words.
Thanks for showing the simple techniques you use. It is so helpful for me learn by watching.. reading all day doesn't do what few minutes of watching does. Super excited for next year! I may try a few in a winter garden in the house!
+vividmonkey I may try some indoors as well. Enjoy :-)
You keep on making these great videos and we'll keep watching them, man. I recommend trying pea and garlic shoots. Plant both any time and harvest while tender, about 6 inches tall. Great in many recipes. You won't get successive harvest but so easy to do.
+Scott Comella Sounds good. Thanks.
+Dave Wilcox Jr The beets would work well for you cause they handle cold pretty well.I'm planning on hooping mine and see how long they will produce.
