Coffee Layered Butter Cake 咖啡牛油蛋糕

    Ingredients:
    250g butter (奶油)
    170g (3/4 cup) caster sugar (细砂糖)
    4 large eggs(鸡蛋)
    250g (2 cups) plain flour (普通面粉)
    1 tsp baking powder (发粉)
    1/4 tsp salt (盐)
    60ml milk (鲜奶)
    1 tbsp instant coffee powder (即溶咖啡粉)
    1 tbsp hot water (热水)
    1/4 tsp coffee essence ,optional(咖啡香精,随意)
    45g (1/3 cup) toasted pine nuts (烤香松子)
    Bake at 180°C for 15 minutes each layer
    每一层以180°C烤15分钟
    Final layer bake for 20 minutes
    最后一层烤20分钟
    7” square baking tin
    7寸方形烤模

      Did you try it? Did the layers come out as shown in the video? By removing the cake from the oven time and again did the cake bake evenly.

    I just baked this, but modified it to become a marble coffee cake. Didn't go with the layers.. it's perfect! Not too sweet, loved it! Your coffee cookies are spot on too.. thank you so much for your recipes katherine! ❤️

      Hi KK, I really appreciate your sharing of video. Can I check why for each layer poured must be baked b4 next layer. Then will those balance mixture quality not so good? Can we just layered all at one go then bake,? Thanks

      ngswee2 Yes, you can bake all layer at once as you wish, but the layering of the cake will probably look different from the video.

    Helo ,yesterday we made this cake .The taste is good but the bottom look like not cook well and the layer of the cake doesn’t stick ..Can we know what the reason for this .We follow your receipe only that we use cake flour

    面糊可以调好了分着烤,那如果制作成牛油纸杯蛋糕也可以因为烤箱小的关系,分几次烘焙不会影响面糊对吗。

    The whole cake of 4 layers takes 65 mins to bake. Won’t the layers at the bottom be overbaked and gets too dry ?

      @ Ellen Yeung, I thought the same thing that they would be dry or maybe a little over done. The end result looks wonderful I’m definitely gonna try this but layer the batter n bake only once.

      Cindy ngian hi I have never used gelatine sheet before but suggest to use 8g gelatine sheets (I use 8g of gelatine powder)
