if you were to increase the length and width, is there a certain multiple that we should use? like how it's 95 chain spaces in the beginning. it can just be any odd number?

I disagree. I’ve been crocheting for about 20 years. Started as a child with my mother. And the instructions were told and shown perfectly. I didn’t have to back up or anything. You’re entitled to your opinion, I just personally don’t understand what else you expect when all she can do is speak and show.
You are very critical of this lady. She did a great job showing and explaining it to us. (Maybe you find it confusing because of her English accent-in that case, you need to be a little more tolerant-and you can always use the You Tube subtitles.). Also, remember that you are getting this content FREE. If you don’t like it, don’t watch it-no harm done. However, what I would suggest for us to do when we attach the strips (“fillets?”) to each other is to block the strips first-then it will be easier to see where to attach one strip to the other.
