blueberry chocolate, red velvet cake/pudding

    Chocolate and blueberries make a perfect match.
    Well if your like me and you don't want to make a full recipe, Epicure is so easily converted to smaller batches.
    I also wanted an EGG FREE version and lots of protein. I replaced the 2 eggs with 1/2 a cup of cottage cheese and only used 1 tbls of oil, the milk could be dairy free I just added enough to give the batter a cake like consistency.
    I added 1 cup of blueberries, 1 tbls of sugar and 1/4 tbls of cornstarch topped with the batter. All this to rest just a few minutes before placing in the oven at 180 Celsius for 25 to 30 minutes.
    Because of the BLOOPER I decided to save what was left and place it back into the baking dish.
    It was delicious, I will try not to slip next time...laugh it off and eat CAKE.
