    You have GOT to make us a cookbook. I love the idea of you starting with the recipe to can the item and then in the rest of that chapter the recipes you use that canned item with. This would be a cookbook I think MANY of us would go CRAZY OVER!!!!!

    I am an old man who runs a hot sauce company, and an accompanying RUclips channel. I want to say a few things.
    First, I have been viewing MANY onion jam videos. I intend to make a good quantity for the winter. Yours looks and sounds amazing. I will be trying this recipe tomorrow.

    As I enjoy my ham & egg multi-grain English muffin with this fabulous onion jam, wanted to come back to this video of yours to thank you for convincing me to can this up! I didn't know i needed this in my life, but i did, it is SO amazing!
    Now to go process the rest of my .79/lb hams and get those clearance muffins in the freezer. You've reminded me how i was raised and inspired me to revamp my shopping habits and rely on seasonal abundance to fill my pantry. My daughter is now learning these same money stretching ways.     Tripped across Cedar's Foods Balsamic Caramelized Onion Hommus earlier this year. It was life changing LOL It inspired me to start making caramelized onions almost weekly. It reminded me how much I LOVE caramelized onions.
    When my grocery store stopped carrying the Cedar's Foods version I started making it myself. Sometimes from scratch, dried garbanzo beans, but when I'm lazy or in a rush I just mix it up with store bought roasted garlic or plain hummus. I bet this jam would be perfect for making the hummus! What a time saver that would be when I'm in a rush. Grab a jar of the onion jam and a tub of store bought hummus throw it all in the food processor. Voila!
    Looks like I'll be making Balsamic Onion Jam in the very near future.

    Thank you for all the homesteading recipes and ideas. I’m in a situation similar to yours. I used to live on a farm, but now live in a small house in suburbia. I can’t garden because of the HOA and they spray pesticides on everything. I am doing a small container garden on my porch with herbs and a few veggies. I just happen to have a huge pot of rosemary growing. It’s the only thing that survived from last year.

    I love mixing onions types together and happy to see someone else who does too! Same with multiple sweetness & vinegars. There’s no way this recipe is short on flavor. Not a huge fan of rosemary but my husband is and I’ll eat it for the health benefits. I love keeping veggie scraps & eggshells in the freezer to add to my bone broth.       Brittany you said it, this recipe "is not short on flavor" which is why its in my arsenal. I totally hear you on the Rosemany, so feel free to leave it out or switch to an herb you like. Adding herbs from my garden is a way I make sure I'm using what I grow (and I very much enjoy rosemary). So happy you enjoyed this video!

    Ok, I’m a believer now! I’m not usually a fan of onion, though I’ve learned to tolerate small diced onions cooked into food for my husband’s sake. But I was recently given an extra bag of Vidalias, so I figured I’d try this out. We ate it on top of some baked chicken last night, and it was delicious! Thanks for sharing the recipe, because this would have been quickly pushed off my radar if I hadn’t seen it used so many ways.

Truly, you are experiencing a dream come true and moving into a daily way of living that, while requiring work, is soo satisfying. I couldn’t be happier to hear this news!
      Yes, a few months ago I finally got a Berkey after eyeing them for several years. I do plan to do a review but didn’t want to rush anything before I truly felt comfortable. No regrets with that. I do appreciate your compliment and curiosity about my humble kitchen. It’s an electric mix of thrifted, passed on to me and purchased items. You did offer some excellent ideas. I’m planning a kitchen cabinet reorg to share at the beginning of April. I can def do a separate tour video too! Consider it done!
      I did a small haul 3 videos back. I shared some ideas but it’s not like my spring and summer hauls and I miss those too. Honestly it’s because I’m trying to clean out the freezer so I’m making broths, and canning items like beans, meats, and dinner jams because once the farmers market opens back up and the abundance of spring and summer produce is back Im consumed with processing all those items and I don’t have time to keep up with the basics. I will be back in full haul force mid April for sure!! Thank you for your encouragement and ideas! Good luck with the move!

    This and your french onion soup are good. I had the jelly tonight on mashed potatoes with steak and it was a wonderful finishing touch!
    I do have to point out that the pectin needs to be addressed better in your video and recipe though. I am an experienced jelly maker and knew how to manage it but I went back a few times because although the pectin is in your ingredients it isn't mentioned elsewhere. I also didn't find any mention of an acid to complete the reaction.
    I am looking forward to eating up the jars I made today and trying this recipe again in the future. Thanks 😊

    I love the idea about adding it meatloaf. It would be no need for a topping! I’m going to pick up pectin next time I’m at the grocery store.

    Cassandra, that turkey sandwich has me drooling! I have a few different onion jam recipes, but this one is not one of them, and I will be giving this a try real soon. I can only imagine how amazing your kitchen smells while you are making this.

    This looks most excellent...your recipe doesn't seem to say at which point to add pectin. I'm guessing along side sugar and honey etc? If it's there and I missed it then forgive me. I just want to be sure I don't mess it up . Will this recipe double or triple well or do I need to do one at a time like some jam recipes. Thanks much. Happy Holidays.

      Haha! After I ate my that sandwich I slept for an hour-it’s sooo delicious. It’ll be hard for me to “top” this any time soon. I will be showing my bourbon bacon jam recipe soon. My compost almost never sees onion skins because I’m so excited to freeze them for broths and stocks. They add really good color and have antioxidants and vitamins. You can even make onion skin tea to help induce sleep or help with cramping (a regime over a few weeks because it’s all natural). So good to “see” you!!!!!

      It’s actually a biodegradable loose leaf tea bag from a brand I picked up at a co-op market! They come in a box of 50 for a few dollars.

      Hello! Good question (it's one that I had too) Without giving you a lengthy response, I'll try to be succinct: Using garlic boils down to the fact that this recipe uses a brine (vinegar and sugar), and sliced, not whole garlic cloves in moderation. While I do not recommend canning whole cloves of garlic ( there is no approved USDA method for canning garlic as you mentioned) there ARE tons of approved recipes that use sliced and minced garlic (reduces density) in many approved recipes. Does this make sense? Ultimately, the ingredients you can with (or without) are your choice, so continue your research, and if you're still on the fence, just leave them out. It'll still be delicious!

      @@BecomingaFarmGirl i think i get it. dont can whole garlic BUT if the garlic is minced or shopped in tiny pieces PLUS if there is vinegar and sugar -its ok.

      Exactly! And, this is cooked for nearly 40 min. Botulism spores die once boiled for at least 5 minutes at 185 F (before or after canned). I appreciate your curiosity!

    I just came accross your channel. I love this canning recipe, but I don't understand that rosemary sachet thingy, can you complete without putting the roasemary in the sachet? What is the purpose of the sachet?

      Hello! Ah yes, the sachet is completely optional, but I prefer to use to purely for the appearance and to ensure the potency of the Rosemary doesn’t get stronger as it sits in the jar. I just like having the look of the garlic and onions (with the surprising and delicious taste of the Rosemary) rather than the twiggy like appearance Rosemary adds (especially when darkened with the balsamic). You can totally leave the Rosemary in there and I’ve done so with virtually similar results. Thanks for stopping by!

      Hi Nia! Yes, pectin is necessary to give things but of a hold/spread. Now, it’s not unsafe if you don’t use it it’ll just be soupy. Keep me posted!
