  • It's time to bring in the onions from the garden, and come up with our plan for them this year. I'll share some tips with you on how to peel them easier, and then explain what I plan to do with all of these onions this year. Oh, and I'll show you a cool tool we use to help chop them up faster ♥

      I watched her and many Italians can tomatoes and they don't add any lemon juice. I hate lemon juice or citric acid added to my tomatoes, its makes them sour so I stopped doing it. My tomatoes burn even the slightest cut in my hand so I know theyre acid enough. Plus I tested the ph, theyre 4.2 so why add souring additives to our fresh sweet tomatoes, it ruins them.

    I did an experiment this past year with my onions in the UP: I had planted my onions from seed and many were just tiny at the end of the season. I decided, "what do I have to lose? They're too small to use, I'll just leave them all winter and see what happens!" Well, they survived our 320+ inches of snow and became respectable sized onions in the last few weeks. So I'm doing it with all of them this year! Shocked that it worked! 😳

    I have been a fan of the Azerbaijani channel for some time, to the point, that for Christmas 🎄 I was gifted a Samovar 🤩.
    I’m very happy to say while I only discovered you a few months back, I am trying to power watch as much as I can while staying up to date.
    And while you may have been taught the best way to peel onions 🧅 by the Azerbaijan lady Aziza, I have actually been taught it by you, because I obviously have missed that episode xx

    I love watching Country Life Vlog. The farmland is beautiful and I love the way she does everything. No talking, just nature sounds and watching her and her husband working the land. And have you noticed how all of the animals just hang out together and play with each other? I so love that! I bought an 18qut roaster from the thrift store for $20 I think, last year and have dying to use it. So this years garden sucked so bad. Nothing did well at all but I have been able to use my roaster and I'm using it now with my onions (I had to buy).

      I love country life Vlog also. It's Paradise on Earth where people get to use their bodies like we were designed to do. They also have another one that's a foreign name. The early ones were mostly around their little house out in the country where they keep their sheep. The s o n is such a great photographer!

    I always save my onion tops too! I pull off the dead parts and slice up the rest. I put them in a big ziploc bag and use them just like I would onions. Then I can add a handful to my recipes. Such a great way to eat most of the plant.

      I dry my onion tops and my onions. That way I have them for the whole year.

      When we have a lot I freeze them in ice cube tray’s with a little oil to cook with .

    @countrylifeblog is the most zen of homesteading channels. They use to own a restaurant and then I think during COVID returned to their home. Make you want to go to Azerbaijan…maybe one day they’ll take it off the no fly list!

    I love that woman from Azerbaijan. I watch her all the time, but I am confused by the differences in her videos. Some people are saying she does not live in the places, but it is a set for a tv show she is doing in her country. I don’t know, but I love watching her, and the scenery and photography is stunning. I always chuckle at the massive quantities she prepares.

      Her name is Aziza. Husbands name is Aysel.
      It is not a TV set. It is their home and surrounding village.
      Her son, a former chef, films for them.
      She is real. Her home is real. All of it is real.

    Hi Rachel! Thank you for the inspiration of new recipes. I went to an Amish farm coop yesterday. Tomatoes, jalapeños and onions made it into my car. I have made your cowboy candy recipe and onion maple jam. Oh my gosh, it is so good. I also made French onion soup today. Tomorrow I plan on making tomato soup, sauce and diced tomatoes. Thanks to you and Todd for such great videos!

    Rachel, the birds @6:30. Try flash tape. I place sticks or stakes randomly with 8"-10" of flash tape tied around the tops. Just a few of these flashy little flags will scare away a lot of birds.

    I can't believe we watch the same channels!! Did dilly beans last night. I know they are not your favourite, but my daughters love them with salmon. I still have fresh onions from last year hanging in the dinning room and looking towards this year's harvest. I grow about 1400 of onions every year, it does the preserving and cooking for the year, all from sets. Good luck!

    When I do caramelised onions I chop them in the food processor. Makes quick work and we seem to like our onions on the smaller size for recipes. Usually a jam jar is the perfect size for most recipes.

    I love onions so much.. sometimes I'll just throw a few in a frying pan with a little bit of butter so I'll tell them a little then crack a few eggs on top flip them over and eat them just like that

    Rachel, I have that chopper you are using and I love it. It’s called the Vidalia Chop Wizard, available on Amazon. I use it for my onions, peppers and jalapeños. It saves so much time! I am not able to garden in my area but I do get a lot from farmers markets and going to try canning the maple onion jam this year. You and Todd are a delight to watch. Thanks for the inspiration!

    Hi Rachel, we subscribed to A Good Life Farm and excited about watching and learning. That's amazing how cool it is where you are. We are at day 56 over 100 and not a drop of rain. Mike and I watch the news in the morning and every day fires are breaking out. We hang our onions in the mud room in mesh bags and they will stay cured for months. This weekend we are going to start making bacon maple jam, caramelized onions and onion relish. Many Blessings, Rochelle

    Thanks for sharing the link to the maple onion jam! That sounds amazing. My husband is also the superior chopper in our home. I’m so glad because I don’t enjoy the chopping much. I focused on mastering onions this year here in zone 4 and I got some really great onions and some small ones. I was afraid to plant out as early as they said I should but I will go on and do that next year.

    Your lucky to have what you got, for every time I planted onion seeds none grew. The other day I watched a squirrel jump from one tote to another then run out to my big garden and sniff around to area I planted different seeds. If it weren't for the Egyptian walking onions I have I wouldn't have any. I was going to mention all the green tops I would freeze dry in your Harvest Right and when dry powder them in a blender when they are done. I powder a lot of things to cook with. Keep up the good work I love your show. My Amish friend told me to put Frankincense oil under your tongue and a lot of you pain will go away. Pick some up at your Amish store next time your at your cabin. It really works.

I need to buy onions though (sad face) mine didn't turn out at all. But......we are loving your canned cabbage slaw recipe!! It's delicious! I watch that channel also in the foreign country. Her flowers amaze me!! She always sets such a nice table for their meals too. Take care and keep those videos coming.

    Great onions! I have 3 of those Vidalia onion choppers ! Love them ! My onions are horrible as are my green beans did not produce anywhere close to last years crop. Planted more rows of them so I can keep on picking . Also my squash is a giant fail this year . No butternut as of yet ! Each year is different !

    Earlier in the year I was struggling with my hand control and realized that having plain caramelized onions for cooking wasn’t good enough. When I felt better, I canned jars and jars of caramelized onions with peppers and mushrooms. Now, when I need those in a recipe, the time it takes is negligee as all I have to do is pop open a jar. Sometimes, when I want eggs for breakfast, I pour in a jar with the eggs and scramble is all together. Takes seconds.

    I get like that too, sometimes I just need to sit, & prep my veggies in the living room watch a movie. I need to set my porch up with a cushion. My daughter made me a bench from an old head/foot boards it's beautiful but not real comfy, plus I have a swing. One of these days I'll finish decorating with cushions etc.....
