It's very aesthetically pleasing but I never had a cake with fruits like watermelon that have much water, and I can't avoid asking myself if it fits with cake and custard... I think it may soak the cake and not be as pleasing qhen eating.
I wondered about that too. I think the cake is served chilled. If that is the case the custard would be firm and wouldn't have an issue with the difference in texture with something more solid like mellon. Additionally, if the cake was chilled the liquid from the melon would stay in the fruit better and not leak out to make a soggy cake.
I think that’s why they put those watermelons in cream layer. The cream can be juicy while the cake layer is still soft and dry. I think they did a lot of homework before creating this recipe.
I think the custard will protect the cake from the moisture of the watermelon, the watermelon never really touched the actual cake, only the custard. As of the taste, it will depend on one's personal preference
I did make the cake and one step to avoid as much water leaking from the fruit is to place those pieces on paper towels to absorb the leaking juice as much as possible. Then you can use them for your cake.
I'm wondering if instead of green tea flavouring, you made it mint instead? Just because mint (common garden mint) pairs so well with watermelon. I saw you used tiny mint leaves to decorate, but I feel it needs more. Dunno....just an idea I had. :) I'm notorious for fiddling with recipes. :P
This cake is absolutely beautiful 😍 The title might be a bit confusing for French people like me though as Fraisier is made out of the word "fraise" which means straberry so I was expecting to see straberies at some point in your recipe 😅 Anyway you have amazing skills I love your videos !!

See, the thing is you can just scoop the melon with one of those circular melon scoopers and it tastes just as good. I see why you chose to work with gelatine and sugar though, so it's a thumbs up from me!
Thank you very much for your recipe. First thought came to my mind was the cake looks amazing but I don't feel like watermelon will go well with the cake. I made the cake with a bit struggling. It didn't turn out as beautiful as yours. I had the problem with the top was quite heavy so it was likely to push the watermelon jelly out. However the taste was good, out of my expectation. But it was still a bit too sweet for me even though I reduced 15g of sugar from the sponge and 5g from the cream. I don't like the watermelon jelly though, if the flesh is filtered out from the juice it will taste better I think. Or just replace it with watermelon flesh ball, it's yummy and fresh..
You see, now I'm mad for two reasons.
1. I could never cook as well as you
2. I'm very hungry now
