El Pollo Loco Chicken Recipe

  • Ever wonder how to make that good el pollo loco chicken?
    well heres my take on that :)
    4lbs chicken
    6 oz pineapple juice
    2tbsp lime juice
    1tbsp white vinegar
    2 garlic cloves (minced)
    1/2tsp salt
    1/2tsp oregano
    1/8tsp pepper
    1/4 tsp chili powder or fresh minced jalapeno chili
    8-10 drops of yellow food coloring
    1tbsp olive oil.
    marinate 3-6 hours or over night then grill.
    165 Deg. Farenheit (internal temp of the chicken)
    grill for 12 mins each turning 4 times.

    I got to say that this recipe is spot on. I made it today and it tasted like Pollo Loco despite making it in my oven broiler instead of the grill. I also had some extra sauces from Pollo Loco that I accompanied it with, so it made it even more like the real thing. Now I can eat free range organic chicken and it will taste like I went to Pollo Loco. Thank you.

    My first job ever was at an El Pollo Loco in Dimond bar Ca. and I used to marinate the chicken every night in a rolling vat that we would fill with cans of their yellow marinade. Their chickens were about half the size as yours and were butterfly'd just like you did but never seperated/ halfed untill fully cooked, but otherwise looks spot on with the color of the marinade, we also closed about 10pm and opened at 10am so thats about a 10 hour soak every night by the time the chicken was all marinating in the plastic rolling vats!

    So I tried this recipe, while good, it was lacking SOMETHING. I let it marinate for TWO days before I put it on the grill. Think I'll try this again but maybe add more salt & definitely more garlic.

      the fruit juices are fine do like you said add salt and garlic till you get it right sweetheart.

      For that size chicken, all dry spice ingredients should be doubled. Leave the food coloring out, use annatto infused oil or turmeric powder. I would also add smoked paprika. Thats probably whats missing...believe me, it add tons of flavor!

    is tha 1 TBSP (TableSpoon) or 1 tsp (teaspoon) of white vinegar ..... you used tbsp for pineapple juice and tsbp

      You can looking in the Spanish/Ethnic section at your grocery store and look for a box of ; Sazo'n Goya "CON AZAFRA'N" , comes in 8 packets, add one or two to your marinade instead of food coloring, Mucho Bueno,👌👌😉!
      Plus add some cumin to taste, about 1/2 -3/4 tsp.

      Not too long cause the pineapple makes the chicken disintegrate it's an acid same with the lime juice so maybe a few hours

    This recipe is muy mal. First you never use food color, use tumeric for the yellow. And it is a million times better than food dye. Second you use orange juice not pineapple juice. And in my recipe I use a ton more spices.
