    Ingredients:
    - 3 cup rice (any variety)
    - 1 cup urad dal
    - 1/4 teaspoon fenugreek seeds (optional)
    - Salt to taste
    - Water for soaking and grinding
    - Oil or ghee for cooking
    Instructions:
    1. Soaking:
    - Rinse the rice and urad dal separately until the water runs clear.
    - Soak the rice and urad dal (with fenugreek seeds, if using) separately in enough water for 4-6 hours or overnight.
    2. Grinding:
    - Drain the soaked rice and urad dal.
    - Grind the urad dal first to a smooth and fluffy batter using minimal water.
    - Grind the rice to a slightly coarse batter.
    - Mix both batters in a large bowl, adding salt to taste.
    - The batter consistency should be slightly thick but pourable. Adjust with water if necessary.
    3. Fermentation:
    - Cover the bowl with a cloth or lid and let it ferment in a warm place for 8-12 hours or overnight. The batter should rise and become bubbly.
    4. Cooking:
    - Heat a non-stick pan or a cast-iron griddle on medium-high heat.
    - Pour a ladleful of batter in the center of the pan and spread it in a circular motion to form a thin dosa.
    - Drizzle a little oil or ghee around the edges and on top.
    - Cook until the dosa turns golden brown and crispy. You can flip it to cook the other side if desired, but it is typically cooked only on one side.
    - Serve hot with chutney and sambar.
