Batter is perfect... And hats off to your detailed explanation. As a south indian I'll give a few helpful tips.. You can make perfect dosas without wasting the first dosa too. Remmber... the tava for dosa has to be seasoned well. For this u have to do one thing the night before . Apply oil to ur dosa tava the previous night esp if the tava is a washed n srubbed tava. Your dosa wl turn out perfect the nxt morning. If possible if ur have a dedicated dosa tava... Once the tava is used and washed, jus apply oil n keep it away in a cover until the nxt use. Tava will remain seasoned. Secondly, do not rigorously stir your dosa-idli batter once fermented the nxt morning, you will burst all the air bubbles and your dosa wl turn out flat without tiny holes .. must you add water, then add n stir gently. Thirdly, add a few methi dana while grinding esp for dosa it wl enhance the dosa taste. If you don't get idli rice Use any ordinary ration rice which u can buy for Rs 25 to 35/kg. 2:1 or 2 n half:1 ratio with lil poha and lil sabudana will gv u good results If u don't hv poha or sabudana, jus cook lil of this ordinary ration rice and add to the grinding. Buss...that's it... Hope these tips wl be helpful to a grtt south indian breakfast.
In winters jus Pre heat micro oven for 2 to 3 minutes. Switch off and keep batter in the oven. If u don't have an oven... Then some alternatives are At night after making chapattis place batter vessel on hot tava with flame off. Or keep it on top of any hot curry or dal vessel to get warmth. Keep batter vessel in hot water in a steel plate not very hot and whn water cools off, jus reheat water until u go to sleep.

Now back to heating topic, to ensure even heat is spread on the flat pan/ pots, especially iron ones; try to use a “heating plate” on the gas stove. It’s available in different sizes. I am using 24cm one which suits all my cookware. Heating plate ensures even heat distribution, and it will support the utensil to lay flat and also keep them from burning. Ideal for flat cookware and nonstick. Not recommended for curved bottom pots and pans. I’m using this plate for my tavas, nonstick cookware, and sauce pans and pots with flat bottom. One more useful tip is cut the side of onion . Put one drop of oil in tawa , spread that oil with onion piece. Dosa will come out very easily
