67g (1/3 cup) sugar
15g (2 tbsp.) cornstarch
5g (2-1/2 tsp.) matcha
1 large egg
240g (1 cup) milk
3g (1/2 tsp.) vanilla
14g (1 tbsp.) unsalted butter
Topping
95g (2/3 cup + 1 tbsp.) all purpose flour
pinch salt
1/3 tsp. baking powder
1/3 tsp. baking soda
67g (1/3 cup) sugar
6g (1 tbsp.) matcha
5g (1 tsp.) vanilla
65g (1/4 cup + 1-1/2 tsp.) unsalted butter, melted
1 large egg yolk
Dough
25g (3-1/2 tbsp.) bread flour
120g (1/2 cup) water
60g (1/4 cup) warm water
6g (2 tsp.) yeast
8g (2 tsp.) sugar
340g (2-3/4 cup + 1-1/3 tbsp.) bread flour
42g (3-1/3 tbsp.) sugar
4.5g (3/4 tsp.) salt
1 large egg, beaten
50g (3-1/2 tbsp.) unsalted butter, softened
9g (2 tsp.) vegetable oil
Egg wash
1 large yolk
10g (2 tsp). milk
I would recommend to change out the regular flour for cake flour for the topping
Can I replace bread flour with regular flour?
Hello! Regular (all purpose?) flour still works. It will yield a less springy + soft (but still acceptable) texture. You may need to increase the amount since regular absorbs less liquid than bread flour.
