Old Fashioned Wisconsin Style

  • This is a modern reconstruction of the traditional Wisconsin Old Fashioned. The one thing I omitted was the Sweet/Sour twist they put into this drink and that's because the drink doesn't need it. If you are not familiar, when you order this drink (In Wisconsin) the bartender will usually ask if you would like the drink sweet or sour if you choose sweet you get a little dash of Sprite on top and if you choose sour it's Squirt.
    This variation on an Old Fashioned goes deep into Wisconsin tradition. On any given Friday many most people will gather at local supper clubs for a Fish Fry, a tradition dating back to the 1920's, these dinners are usually accompanied by it's signature drink: The Wisconsin Old Fashioned.
    Although the origins of this twist on your traditional old fashioned remain somewhat of a mystery you can trace the State's penchant for drinking Brandy back to the European immigrants which populated the area. In 1893 The Korbel brothers made their way to the World's Fair in Chicago bringing with them cases of their homemade Brandy. The liquor served as a reminder of home to the many Europeans from Wisconsin attending the fair and they brought bottles of the liquor home with them. Fast forward to present day and Wisconsin is the single largest purchaser of Korbel Brandy in the United States.

    No one here expects you to be the best bartender in the world, maybe you do in some way, but I don't think most of the viewers are. That being said, having people constantly brag and argue about what is and what's not is a thing you just can't miss. All of that doesn't make you a less of a professional because you apparently know a LOT of shit my friend. Keep up the good work, neglect the haters as they only keep us down because it's all they can do.

    Recently, I was visiting the Chicago area and was having dinner with friends in a family restaurant and noticed that they had a small drink mixing station. So I asked if they could make an Old Fashioned. The waitress then asked me if I would like it with whiskey, rye or Wisconsin style. I took the original version - rye - sugar - bitters - lemon. And this was an excellently made drink that slightly morphed as the night went on. Good video. Many thanks.

    Oh thank you for actually CLAIRIFYING the difference between the " sweet and sour " on a Wisconsin Old fashioned! I got a " kit " to make the cocktails when I was up in Wapun at a truck stop doing a reset of my hours ( yes I'm an OTR driver) and have been fascinated with mixology.

    That has to be the most professional Wisconsin Old Fashioned I've ever seen. Most of the time they just make the drink in layers in the glass. Muddle the fruit, sugar & bitters in the glass with a splash of sprite. Then add in the ice and brandy and if the glass isn't full they top it off with soda. You have to stir it yourself even. Still great video though!

    Love your videos. I'm from Wisconsin. Instead of sprite or grapefruit soda, many people enjoy club soda as the topper. It adds no sweetness, just a little effervescence to lighten up the drink. Just stir the drink less to get the proper dilution.

    You know it's funny, I live in Wisconsin and everyone I know makes an old fashioned with brandy...except for me. Always whiskey the traditional way, no orange, no cherry. I think I learned all of how to make a proper old fashioned from one of your older videos. I dont even have brandy in the house! People call it the BOF. Great video and thanks for sharing!

    luv the channel if i could suggest please come to WI and have a Wisco old fashion. you were so close but i would be run out of my own bar on a rail if i strained an OF and did not top it with sprite or soda or squirt. been at this for the better part of 20 yrs in different spots in WI and pretty consistent in the make. that being said at home i make barrel aged classic OF which are awesome but for most of my WI friends i still need to put a orange at the bottom at least 😊

    I could have sworn you already did a Wisconsin old fashioned. I said in that episode that 2 different people from Wisconsin, that work at my bar, said you shake and strain. Had to reteach them the methods of old fashion making.

      As a Wisconsin native don't worry about straining. Most places that muddle just leave the fruit in the bottom of the glass.

    Great video as usual. I liked the jack and coke old fashioned also, nice twist on it. Some people just want to argue semantics, pity really. The same person that will argue whether or not topping with soda makes it an old fashioned will surely do so with substituting *gasp* a sweetener. I wonder how they feel regarding the argument of monocles vs glasses, or the model T (I'll take mine in black please)

      In another video he explains he uses a Japanese "bitters dasher" and the dashes are smaller than if you used the Angostora bottle. I have no more room at my home bar for a Japanese bitters dasher.

    I've only had one Wisconsin Old Fashioned, it was different. Everything was built in the glass and the sugar was soaked up by the orange wedge. I'm wondering how may regional variations of this drink there are. I live in the la/oc area, seems like the oddity I see here is the number of different types of bitters or sugar/syrup you can cram in one glass.

    The story I heard was that the World's Fair ran out of whiskey before the end of the festivities, so they started switching to brandy and it was a hit.

    Leandro, if there's one thing I've learned from Reddit..... people are perfectly ok with turning the conversation into a cesspool about the most trivial things possible. It's unfortunate how vicious people will get about fucking cocktails, Music, TV, Literature, pop culture and pretty much everything that we should just enjoy. In any event you and maybe like 2 or 3 other people on the internet are my go-to for cocktail info.

    Would that explanation of root cocktails and the variations grown out from them make my referring to my drink, the Henry's Old Fashioned/Henry’s Cocktail, as an Old Fashioned correct? Due, of course, to it containing St~Germain as a sugar, bitters, and Jameson as a whiskey, and being diluted by shaking thoroughly with ice.

      I just opened a jar of Luxardo cherries like the one in the video. I was surprised to find that the label has the following in bold print: "For best results, store at room temperature. Once opened, keep the jar closed in a cool and dry place. Do not refrigerate, cold temperatures may cause product syrup to crystalize." That said, I'm pretty sure I've put the jars in the fridge before and didn't have any trouble. You're probably fine either way.

    I know I am very late to this video.
    Personally I think I like this approach better than the first one you did from Morgenthaler, the crushed ice dilutes the drink too much. I would of topped it with seltzer as well that would make this drink even more in line with the traditional cocktail, but still would be elevated beyond the supper club’s versions. I really appreciate the double straining as that is something that always bothered me in the traditional drink preparation. I also like the cherries being luxardo instead of the neon red ones. Finally instead normal naval oranges I would sub them out for Cara Cara.
    As another Wisconsinite the Brandy Old Fashioned now comes in 4 ways to top the drink. Sweet, traditionally 7up, not sprite, but it can be used instead of 7up. Sour, traditionally a soft drink called “50/50” out of Chicago, but I believe now no longer in production now substituted with squirt. Pressed, a 50/50 mix of soda water and 7up. Finally topping with soda water/seltzer which I think this is becoming more popular as people are moving away from sweeter drinks.
    And as you mentioned here it is always made with Korbel brandy. I don’t think I can personally make this cocktail without Korbel as my Wisconsin blood is too strong.

    Do you think the muddling of the cherry orange slice in this drink is where the horrible version of the Old Fashioned cane from? Like originally it was made and stirred in a mixing glass and then one lazy bartender just made it in the glass straight up to save time?

    I was living/working in Miami and when you order/serve Old Fashion all they ask is what kind of bourbon. Have have been living in Milwaukee last 4 years and I can't get over how complicated ir ordering Old Fashion. What kind spirit? Brandy or Whiskey then what brand? sweet or sour? They might order "press" half soda and hap sprite! then the last Q is muddled or not!!!!

    I tell you why the Wisconsiners (Wisconsinists?) drink a lot of brandy: scandinavians, especially Norskys. Yes, we Norwegian love "brown" liquor. We always loved it, we call it "noble" liquor and if you get your hands on it you're king. So, down they came from Minnesota because it was all shut because of temperance and they bought it in Wisconsin instead. Norwegians, and a few Swedes, Danes and those wanna be Scandinavians, the Germans.

      Not in any way disagreeing, but my understanding is that this is more a German heritage thing. Germans tend toward sweet liquor (I know, wide stereotype); consider their Riesling wines and such. I wasn't aware of the World's Fair link, but it's no surprise that the strong German culture in Wisconsin prefers a sweeter Old Fashioned than a traditional Whiskey based drink. This video was great, and is a better version than you get in most Wisconsin supper clubs.

      @@danwestel3911 I agree that this is a great recipe and I really like the way that Brandy/Cognac can replace the Whiskey and make an absolutely delicious Old Fashioned, Sazerac and Mint Julep. When it comes to the Germans in Minnesota/Wisconsin I am generalizing and pushing my point a bit overly, I will accept that. However, in Germany Brandy is popular but not to the same degree and that is a bit interesting. Sure, Germans like both imported Brandy as well as their own Asbach Uralt and Dujardin, but I think they traditionally they have gravitated in a higher degree towards Korn, the milder German version of Vodka, Inländer Rum and Kräuter Schnapps, the herbal bitters found all over Germany. I've never seen Germans use Brandy in cocktails or drinks for example, so it is a bit of a mystery how they ended up being crazed about Brandy once they settled in the USA, don't you think? Korn would have been easy enough to make in Wisconsin and Rum's been imported to the US long before the US existed. But maybe Brandy was too unobtainable in the old country and more available in the States causing the gravitation towards it? I don't know. What I do know is that Norwegians specifically are crazy about Cognac and Brandy, and being Norwegian myself I am the first to testify that is true.     Have you ever had an old fashioned old fashioned that’s when you take a shitty whiskey and put other stuff in it to make it tasted good. No expert but pretty sure the old fashioned dates back to before whiskey standards. Can you verify?
