Pork Turnovers, Fried Glutinous Pork Dumplings

❣️Quick tip not mentioned in video: coat rolled pork turnover lightly with rice flour. This will help prevent pork turnovers from sticking to each other while frying. ❣️
Filling:
1 clove mince garlic
1 lbs ground pork
1/2 cup dice wood ear mushrooms
3 TB cilantro/ green onion chopped
1 tsp corn starch mixed w/3 tsp water
2 1/2 TB oyster sauce
1 tsp light soy sauce
1/2 tsp white pepper
Salt to taste
1 tsp oil
Dough:
2/3 cups wheat starch
2/3 cups boiling water
1/4 or 1/3 cup sugar for hint of sweetness (1/2 cup if you want it sweet)
2 cups glutinous rice flour
1 tsp baking powder
1 cup water
1 TB lard

Zoey, can you substitute the lard with oil and wheat starch with topica starch? Just don't want to buy these ingredients and not use them after making these. Thanks.
You can use butter instead of lard. I have not yet tried with tapioca starch so I am unsure but it may work.

Hi, I recommend using wheat starch. Corn starch or potato starch can be substitute but I find wheat starch gives the best results.

You can refrigerate. I have not tried freezing yet.

Sorry for late reply, some people had a hard time finding wheat starch so the new video was made without wheat starch and included dried mash potatoes.

Wheat starch is a refined form of wheat flour. They aren’t exactly the same thing.

You didn’t use your kitchen aid, is it easier to mix by hand?
It’s the same, I prefer by hand so I know if I need more water or not. Also doing by hand prevents flour from getting into the air while mixing.

It’s comparable to corn starch but not exactly the same.
