You can stuff them with whatever you like. I like to grind shrimp, add to the batter, and further, stuff it with shrimp tempura to make tempura stuffed ebiyaki, and also put in a pinch of finely chopped ginger, green onions, and chives. The shrimp will cook perfectly and will add flavor to the batter. Sometimes I'll add tako inside the ball too, but not often, as fresh octopus is expensive here. I also put soy sauce in my mixture and a very light dash of rice vinegar, as well as a little bit of rice flour to make the inside even more moist. Super flavorful.
I find it interesting that you don't add eggs to your mix though. I add one egg and it helps fluff up the yaki batter when it cooks.

Takoyaki is great. I live in Japan and absolutely love it. Recently I've seen it made with some other ingredients for kids who aren't so into seafood. I suppose its not really "tako"yaki anymore, but I've seen the tako replaced with things like cheese, all in the same batter and topped with the same sauce. Its good, but its not as good as the original. Nice vid! Keep up the good work!

Hey man! Hoping you can help me out with my octocooking knowledge: If you have freshly catched octopus what is the best way to get it tender?
So I usually slap it a hundred times before cleaning it and then proceed with cooking it.
    1. In boiling water: for how long do you cook it?
2.Pressure cooker: I do around 10 minutes and the result was pretty good I must say.The flesh gets nice and tender .Have you tried it?
    3. I heard it can help to put the octopus in the freezer for some time before cooking it in boiling water to get it even more tender. What do you think?
4.Have you ever used the content of the translucid brownish sack you can find in the head to make a sauce out of it? I really recommend it.It's really tasty
5.If you buy the octo in the supermarket how would you treat it compared to a fresh one for optimal results?
Never tried the salt technique for getting rid of the sliminess. Does this really make a big difference on the end result?
Thanks in advance for your insight bro! Have a good one
