I mean, yeah it definitely seems like a weakness that came out of nowhere, and just barely cohesive in regards to Jason's characterization in his past ventures, but in the context it works.
All those times Jason's been unperturbed by water was because he was adamantly suppressing his hydrophobia under the murderous rage caused by the intrusions on Crystal Lake.
But here, in the Dream Realm with Freddy Krueger, while again quite angry, he was on Freddy's turf where the dream demon has shown before that he can peer deep into his victims' minds and see their fears. Quite reasonable that Jason would be vulnerable to feeling his fears, even the deepest ones manifest in that situation.

This was such a great memory from my childhood. Pretty awkward watching this in the theater with my mom as a kid but it was so worth it.
The way the machette stays on fire is possibly because it was 1) soaked in gasoline like Jason, and 2) do you really think that Jason would clean his machette? Or that it didn't have some trace amounts of human fat and gristle stuck to it?
Let me debunk those points you made...
1. There were no traces of gasoline in the scene.
2. By Jason not cleaning his machete I believe you meant there would be blood and bone fragments on it, but blood and bone doesn't light up even the slightest bit.
3. The human fat could have easily gotten wiped off by the intense slashing, even though human fat does burn, it would work unless there was the Wick Effect included, or basically meaning a human candle. *Clothing gets soaked in human fat and then burns.*
Edit, metal doesn't burn even if there is fat on it.
