You should never “knead” scone dough. You should mix it until only just mixed. Otherwise you get a very tough scone. Once you taste the difference then you know. This is a basic rule that anyone who goes to culinary school is taught.
That is true ,
I wouldn’t knead my scone dough either, but the end products in this video look puffed enough after baking. I wonder why…And some viewers actually have testified the taste since it’s a shop in their region. I’m not sure if it’s because of the layering method in the video or maybe there were additional additive put into the dough to make it less dense (given it’s a commercial product not homemade, it’s not entirely impossible to contain more additives than we think)…Overall I enjoyed watching the process though, the ingredients looked way more decent than many mass produced snacks alike.
@@LJune-cq9jd it makes the scones “tough”. This wouldn’t be visible. You can only taste it. I do love watching these as well.
