How to Make a Peach Upside Down Cake - Easy Recipe

- Fresh peach and caramel crusted cake with fluffy peach cake underneath, this peach upside down cake is sure to be a highlight at any get together!
Ingredients:
Topping:
Fresh sliced peaches
1 stick unsalted butter
1 c brown sugar
Cake:
1 1/2 c unbleached flour
2 ts baking powder
1/2 ts fine salt
6 tb soft, unsalted butter
1 c sugar
2 room temperature eggs
1 ts vanilla extract
1/2 c fresh peach juice
Instructions:
In the cake pan, melt the butter and stir in the sugar. Allow it to blend together and bubble.
Arrange the fruit slices on top of the caramel.
In a large bowl, sift the flour, baking powder, and salt together.
In a separate bowl, cream together the butter and sugar for about 5 minutes.
Mix in one egg at a time with the vanilla.
Blend in the juice.
In 3 separate additions, sprinkle in the dry mixture and mix to combine. Don't over mix.
Bake at 350 for 35-45 minutes.

This looks really good I am going to have to go buy some peaches from the fruit stand near by.
Woo hoo. Ok, so it's not peach season currently, I have canned. But...just wanted to let all know it worked fabulously...by subbing drained canned, I sliced them thinner, used the real peach juice, I used 1/2 cup of granulated stevia in the batter and get this gluten free cup for cup flour. Instead of butter in the batter I subbed avocado oil. In the pan coconut sugar instead of brown and I used a 9" pie plate. I didn't do any of this to be a jerk purposely to alter this fabulous recipe, I used what I had and the diet restrictions we follow. Oh, I think you may get by with less than a full stick in the pan if you are low. Just wanted to let you know it works great at leat this wacky method I used. Thanks Angela, please don't be offended with all the changes. It is May 2020 and pantry is a wee bit skinny. But blessed just the same. : ) Be well my friend.

Hi there! You want to make sure you invert while it’s still warm before the caramel sets. It also helps to line your pan with parchment or use a reliable silicone mold.

It doesn't matter as much {for home cooks}. It really just impacts the thickness of the cake and slight extension of bake time =)
