    Made with Farm-Fresh Peaches, this Summer Cake is a Stunner
    This cake is perfection when made with the kind of fragrant peaches you can only get in mid-summer from a local farm.
    To bring out the fruit’s delightful flavors, the slices are pan-roasted and then drizzled with a buttery caramel spiked with Cognac. Moreover, the cake batter that tops the ambrosial peaches gives just the right amount of structure to the dessert while remaining light and moist.
    A dollop of vanilla Chantilly is the only thing you need to accompany such a gorgeous cake.

    Here is the recipe, the link in the description doesn't work anymore:
    For the Chantilly
    2/3 cup heavy cream
    2 tablespoons organic sugar
    1 teaspoon pure vanilla extract
    For the peaches
    4 tablespoons unsalted butter
    6 medium ripe-but-firm yellow peaches (2 lbs) (905 g) - quartered and pit removed (if using larger peaches, cut in 2″ slices)
    1/2 cup + 2 tablespoons organic sugar
    1 teaspoon pure vanilla extract
    2 tablespoons Cognac or brandy
    For the batter
    1 cup unbleached all-purpose flour
    1 1/2 teaspoons baking powder
    pinch sea salt
    4 extra large eggs - at room temperature, separated
    1 extra large egg white - at room temperature
    3/4 cup organic sugar
    4 oz (115 g) unsalted butter (8 tablespoons) - at room temperature
    1 teaspoon pure vanilla extract
    1 - 9″ round cake pan - lightly buttered, lined with wax paper and buttered again
    Preheat oven to 350°F (180°C).

    & I have been craving having Peach Upside-Down Cake. My Mom used to make it, I never have. (She never used Cognac, though, but I will 😊).

    Tried the recipe today. It was a little bit challenging for me and I thought I would fail this time. The part, where the peach was, was too watery. I let it cool down completely after it was baked. To my surprise, the result was really nice. I and my guests enjoyed it very much. Thank you.

    Lovely! And the cake looks good too! ;-). Love the recipe! Couple of things: Wax paper imparts wax to the food - should that not be buttered parchment? Also, love your accent - where are you from?

    I have a bushel of peaches very large ripening . Should they be more firm or soft for this recipe? Thank you for sharing.

    Hi dear I just have 1 question what if we use brown sugar instead of white.can we use only butter n sugar and leave the 3rd ingredient while making caramel sauce.plz reply soon .tnx

      +zaib mian I apologize for this late reply, but I took some time off for the holidays. I wouldn't use brown sugar to make the caramel because it has either syrup or molasses added to it. But you could use organic sugar or "sugar in the raw". Also it is fine to leave out the Cognac. I hope this helps... and I hope the cake turned out wonderfully if you've already made it!     can we use Canned peach and what are the quantities of the ingredients?Thanks for such a lovely cake

      +Zahra Hassan You're most welcome! I didn't test this recipe with canned peaches, so I cannot tell you the quantities. I also wouldn't recommend using canned peaches as it would not be possible to sauté them before making the caramel. When peaches are not in season, I recommend using apples or pears. Use 5 to 6 medium apples (McIntosh or Golden delicious work well here) or 4 to 5 medium Bartlet pears. Just follow the recipe as for the peaches. Good luck and enjoy!

    Hello, im sorry...how many egg whites are needed? The ingredient list says "1 extra large egg white", but in the video it looks like more, and is spoken about as if plural. Thanks...

      Hello right back! You need 4 egg yolks and 5 egg whites for this cake. See the recipe here: foodandstyle.com/peach-upside-down-cake-with-cognac-caramel/ 4 eggs are separated. You need to add an extra egg white to the 4 egg whites you separated - total 5 egg whites. Does it make sense now? Have fun making your cake!

    I took the cake out 5 minutes early as the top was golden and toothpick came out clean. But the center sank some anyway. Anyone else notice this? I don't want to overbake it and come out too dry.

      Hi David! It is definitely best to cook the cake until a toothpick comes out dry... May I suggest you get an oven thermometer, to make sure your oven bakes at the right temperature? Mine lives in my oven at all times :-)
