    I grew up in a family of ten. Canned sardines with tomatoes, garlic and onion was the one thing I was allowed to prepare on the stove top when I was home alone. I ate it on toast. And it is a dish that could only serve me, myself, and I. So, it reminds me of having sweet silence and being blissfully alone!

    We were poor growing up and canned sardines, SPAM, Hormel Corned Beef Hash were staples all served with ri ce and soy sauce. The sardines were my favorite.

    There are canned filets you wouldn't recognize as "sardines". Packed in olive oil, skinless, no bones - they are little steaks. The energy is superb, they are so healthy for you! A friend turned me onto them, they're from Morocco. I never ate a sardine before but not now!

      My friends' friend told me that the guy always ate a can of those sardine steak filets before a heavyweight lifting match. These are big guys - 6'3", 250 + lbs, V-shaped bodies - athletes - and he stopped and thought about it and said, I never thought it before. He always won 😂

      There is much in the skin and bones which you would be a fool to skip out on. Maybe less appetizing at first but if you can, eat as much of the animal as you can stomache. Meat is the least nutritional aspect animals have to offer us. This is why inuit people survive on animals alone and when euro bois went there, they died eating just meat. They fuckibg died.

    OMG, LOVE THIS! Here's the thing -- this dish also brings old, not-so-special canned sardines back to life. I tried it with some that I bought way back at the beginning of COVID (when we were all panicking that grocery stores would run out of staple foods), NOT especially high-quality, and they've sat in my pantry for almost 5 years (!!!). I decided to add some diced jalapenos to wake up the flavor of the long-canned fish, but other than that I didn't change the recipe. So even if your sardines aren't the greatest, this dish makes them delicious -- and they are one of the healthiest fish we can eat, not just for humans, but for the whole ecosphere.     The bones in sardines and salmon is the best part because it’s full calcium that’s why they packet with that, when I lived in Spain and Italy I always ate fresh raw sardines yummmy

    Especially appreciated your comment to remove the first ore or two outer layers of onion because it gives it a better texture. Have watched many cooking shows on this site that called for chopped onion, and yours is the first to mention this obvious and typical encounter in the kitchen.

    Looks delicious. I usually buy the sardines that are already in the tomato sauce, then saute them with onions, garlic, peppers, some ginger, cumin, other spices. The taste is amazingly delicious 😋.

    Continuing from the previous comment, we had many holidays in Spain before one year we decided on Portugal. Truly the home of the sardine, I like the previous commentator was not a fan because of the bones, but Portugal converted me, and now by far they are my favourite canned fish.

    I drained the sardines right at the start and used the oil to fry the garlic, onions and tomatoes - its so packed with flavour so why not.

    In the Philippines, you can easily procure from supermarkets, small stores, online shopping- all sorts of canned sardines in all flavors and sauces- afritada, corned tuna, menudo, pepper steak, tomato chili, etc, etc, etc.
    Of course, home cooked, like this one is extra delicious.

    Sounds yummy. I’ll give these a try. I like Sicilian and Spanish dishes that make use of sardines. I’m weird that way, almost no one I know finds them enjoyable for whatever reasons, most likely exposure to bad smelling fishy meals as kids and they’ve never recovered from it. Their loss, I guess 😅

    I like to make various things out of canned fish and mariscos. Great things are rice balls. You can add to those balls veggies like sautéed carrots, spinach and so on. Then just freeze them if you will not eat all. You can make chicken broth with noodles and toss them there or on the side. You can play with it as you like. This will be great also on top of rice or potatoes latkes, chapati. Nice recipe like usual. 😊

    Escabeche sauce. Or here in Spain, you can buy them canned with the sauce already. I like the olive oil and lemon version.

      @@SpainonaFork i made it, had to use margarine as i didn't buy oil (the kitchen staff was supposed to do it), sauteed diced red onion and 1/2 bulb total of garlic until onion was clear, then added can of nice tomato sauce, tomato paste, 1/2 cup hot tomato salsa, sugar, pinch of salt, black pepper, paprika, garlic powder, bringing to a slow boil; layered some sauce on the plate, placed sardines atop and some thinly sliced ribbons of Emmanter cheese, then ladled the still hot sauce atop (melting the cheese), and sprinkling red chili flakes & parsely over the top... it was wonderful 🙂 ...PS: disclaimer, in my life there are 2 things that i've always been paid for: music and cooking food , i've been head chef at several restaurants both in US and Thailand, so i'll always add my own twists to recipes; it's nice to have great recipes from the start, as yours always are!

    Sounds delicious. Is there any reason not to drain the cans of sardines first? That way, the olive oil they are packed in can be used immediately to saute the vegetables.

      AND: don't puree the sauce, leave it when it has broken down, AND put the sardines in the frying pan on top of the sauce so they too are hot.
      Just a variant: this looks fine, but....

      I like his recipe, but always personally prefer texture to puree. But that's the value. He has provided a good recipe on which people can easily opt for their own variants.

    Followed your recipe, but screwed up when I used Tandoori spices instead of paprika powder .... It turned out amazing however. The Tandoori gives it a rich smokey flavour. Topped the dish with fresh coriander instead of parsley. And that worked as well.

    For next level tomato sauce, broil quartered tomatoes till the skin starts to blacken. Pull them out, use tongs to remove the skins, then finish the sauce.

    Very nice. I like sardines but my wife is always amused that I remove the bones when I take them out of the can. She thinks the bones are a good source of calcium.

    Gosh, I love sardines but the only ones I have seen is small dinky ones. I will have to be on the hunt for bigger ones, I may have to order online.

    Ive tried using canned sardines like i would tuna ie tuna salad, tuna casserole, etc. All a big fat failure. Yuk. Then I learned that you just need to appreciate the sardines for what they are right out of the can with or without a sauce. Tomato sauce, mustard sauce, or just plain lemon juice. I eat them as appetizers on crackers or baguettes. A mental adjustment made all the difference.

    Hola hola! Tienes la receta de cómo hacer atún en escabeche o pollo al ajillo? Al mudarme se perdieron mis libros de cocina y ya no recuerdo. Son algunas de mis recetas favoritas que echo mucho de menos. Donde vivo ahora es muy difícil encontrar latas de atún en escabeche o las venden a 10 dólares la lata. Increíble. Jajaja…. Por eso prefiero hacerlo yo sola.

    add some chilli it turns out great love the music at the start I play flamenco sardines are low in mercury chefs should know about nutrition good recipe use rice brand oil to cook never use olive to cook use it for salad dressing be well also a tip from a Sicilian use the olive oil from the sardines as a dip for your bread Grazie

      @@SpainonaFork chili is used in Spain try Pimientos de Padrón ah i see well thats a shame, things should change to reflect intelligence, olive oil loses its value when used for cooking, rice bran oil can kill cancer cells as well as chemo enjoy Spaniard

    How close is Orlando Tomate Frito to this kind of sauce? Is it "close enough"?
