For those people not too familiar with sardines, definitely choose the small ones. In larger sardines, the spine is both larger and more calcified, which makes for a grittiness that I don't like. OTOH if you don't mind that, you will get more calcium in your diet with the bigger ones, and they are usually cheaper. Also, there is a wide range of quality in canned sardines. Some cheap brands use cottonseed oil instead of olive oil. Take your time, read the cans and remember this is a food where cost and quality usually go hand in hand.

I recently bought a case of brisling sardines. They’re quite small compared to normal ones. But I find them harder to eat and they have a stronger, bitter fish taste. My favorite sardines are in water or sunflower oil. Around here it’s usually canola/mix oils, soybean, or olive oils. The most calcified ones I’ve seen are the vertical cans from the Phillipines. Good for budget, but not mouth feels. I can feel the bones and the grit. 😨 I like fish with a cleaner taste.

From Galicia, northwest of Spain, grilled sardines, in June and July when they are very fatty and with corn bread, are my favorite fish dish. The smaller sardines, which we call "xoubiñas", dipped in flour and fried in olive oil, are also wonderful, they are eaten whole. I have never seen canned sardines fried, I eat canned sardines with bread, baguette type, but I will try to make them fried, as the Spanish saying goes " nunca te acostaras sin saber una cosa mas / you will never go to bed without knowing one new thing"

I'll be trying this, maybe tomorrow! I have one can left of King Oscar Sprats in mediterranean sauce with black olives. I'll keep the sauce and olives for an aragula salad on the side! Thanks for the great idea!

Hi from Melbourne Australia. I love your recipes all so easy to make and delicious. I’ve been lucky enough to travel to Spain and let’s say the country has my type of food. I looked up your sponsor and got a local Colombian restaurant here so I guess La Tienda is only for US residents

I love sardines, it's such a healthy and inexpensive source of healthy fats and proteins.
I wish I just had more ideas of what to do with them, so you have no idea how happy I was to find this video 😃🥰

Pasta con la sarde is a great pasta dish,
You can mash them while with bread crumbs or crackers with a little flour and egg and seasoned how you like and make fried fish Pattie’s with them.
Or sauté some onion and garlic and chilis then add tomato sauce or canned chunked tomatoes and season how you like and serve over rice or noodles

Always wondered if I could make this dish with canned sardines. Got an imported 2lb tin to use up. Between this and sardine pasta that should do the trick :)

I’ve recently been frying tinned sardines but I haven’t done the flour and egg thing. Had fried sardines for lunch today, will try this method for lunch tomorrow ❤

My family likes them with olive oil and vinegar. Delicious. If you do try them with with garlic butter , try roasting the garlic first.

Love your channel, thank you! I feed sardines to my elderly dog, since I started doing that his coat shines. Perhaps, sardines will help my hair be just as healthy! In England, we used to call larger sardines, pilchards.
