So what kind of sweet potato is this anyways since I don't think I have this specific kind where I live? Would a regular orange sweet potato work with this recipe as well or does it have to be a white flesh sweet potato?
They are Japanese sweet potatoes. Redish skin with creamy yellowish flesh. They're very fragrant and mildly sweet, reminds me of toasted chestnuts. A regular orange sweet potato would work fine, though it may not be as fragrant and smooth (normally they have more fibrous roots in it).

It's called pie weights, they come in all shapes and sizes. You put them in together with raw pastry to stop the bottom of the pie/tart to puff up too much and the sides to slide down. Lending a more attractive appearance and sufficient space for the filling. Raw rice and beans can be used instead.
It is just me or anyone same with me, i don't know. Somehow when i see the thumbnail, it's reminds me of a pie from cartoon Spongebob 😅 i don't know if that pie is really exist in real life 😅🤭
