Bhendi Jaipuri is an awesome dish from the Rajasthani cuisine that has rubbles of crispy fried okra, onions and cashew nuts dusted with spices, mango powder (amchur) and besan flour which is extraordinary made delectable.

Ingredients
1 tsp amchoor pdr
2 tbsp broken cashewnuts
1 tsp chilli pdr
1 tsp cumin
1 cup gram flour (besan)
1 to fry oil
300 grams okra (lady fingers)
1 to taste salt
1 tbsp vinegar
Directions
• cut okra in slices add all ingredients and mix as shown in video sprinkle few drops of water if the flour is not sticking to okra add onions(optional) fry till golden brown at 350 f serve as appetizer or as crunchy accompaniment with other dishes

Hi Mr.Sanjay I would like to thank u for all these videos, Beofore watching ur videos I hadnt any idea about cooking even preparing Tea, I never did that, on the other hand my mother is best cook I believe (it not becoz she is my mother everyone in our area where I live say the same) but she never taught me anything, in our society if a boys cooks we call him by different name, OK, now after comming to USA I had lots of problems then by chance one of ur video popped up, so hence forth I watch ur video continuously, I learned many dishes, now I feel I can challenge anybody at home, I am going back to my home after many many years let me see how much did I learn, and whatever I learned only becoz of you thakns Boss I salute you

I know it's 8 years since you made this video, but it doesn't diminish the pure deliciousness of this recipe.
I was at my local Indian store today and they had the nicest okra on sale but sadly, I didn't get any as I didn't have a specific recipe for it. Now that I've seen this video, all I can say is oww wee, yummy, yummy, yummy! I'm going back to that store and buying that gorgeous okra! Can't wait to crunch down on the yummy!

This is FANTASTIC! In the Deep South of the United States we also make fried okra, however, cut perpendicular to the longitude of the okra... The herbs and spices are a little different but this dish is almost IDENTICAL! Isn't funny how something so simple ties us together even half a world apart... Oh and "BOOM BOOM POW, these chefs are jockin' your style!"

I will use this dish as "FARSAN".
Like a dessert...in Gujarat we have to have a farsan.
Farsan means patara, dhokala, aloo vada, samosa...
So now I will make Jaipuri okara as a one dish of a farsan.
0kra (Hibiscus esculentus) is also called "gumbo" in this country, although the latter term is more often applied to soups or other dishes which contain okra.

I think I need to give you a correction in reference to Gumbo. Gumbo is not another name for Okra but a southern dish made with okra. In fact Gumbo can be made without okra (refer to wikipedia if you need to!). As a person who loves Gumbo, I just wanted to point out that.

If I am using frozen okra, should I defrost them first?
A friend of mine told me that in Turkey they check if a women is a good cook by looking at the way she cooks okra. In Turkey okra should not be slimy. So they never cut it in pieces!!! It is interesting for me to see that in India it doesn't matter and okra is cut into pieces.

put salt + mango powder*(if Possible) at the end
do not cover and cook
cook on a low flame
put some lime at the end
