Spanakopita, which is basically known as a pastry, does not belong to the Greeks. It belongs to the Turks of the Middle East. This has been the case since the Ottoman era. You can research it or check Wikipedia if you like. And of course, moussaka is a Turkish dish as well. I laughed a lot at tzatziki because it’s simply cacık, which also belongs to the Turks. These dishes have been made in Anatolia for centuries. I actually understand why the Greeks have embraced our food so much; after all, Greek lands were once ours, and of course, they have taken a part of our culture. I'm afraid that soon they’ll also claim Turkish coffee and baklava as their own. LOL.
The spanakopita recipe is not an authentic recipe. Ricotta cheese in spanakopita is a no no. Ricotta in greek cuisine? It's an Italian cheese. Spinach and onions are raw not cooked (also no nutmeg, please) and what they usually do to counteract the water from the greens is to add a little bit of bulgur or trahanas or rice. Also they add egg (1 or 2 depending on quantity). And for the phyllo, if you want to go really authentic you open it yourself like our mothers and grandmothers used to do, 2 on the bottom, 2 on top, and the corners you roll them like a cord towards the edge of the pan.

Instead of ricotta, Greeks use Anthotyro which is the Greek version of ricotta (tastes same), but most non-Greeks are unfamiliar with anthotyro. You can also use a combination of ricotta, feta & cottage cheese and add, or not, fennel. okay? I'm Greek.
