- Even though I'm more busy nowadays with a baby and all, I don't want to compromise my health! So I'm really focusing on easy and quick meals that still have all of the good stuff that makes me feel so good 💚 Hoping I inspired you to make some more easy plant based meals ☺️ Recipes down below or in my app.

Creamy Harissa Pasta (recipe from my app)
For the cream:
1/2 cup cashew nuts, raw
1/2 cup water
For the pasta:
4 garlic cloves
5 cup cherry tomatoes
1 tbsp tomato paste
1 tbsp harissa paste
3 cup vegetable broth
11 oz whole wheat pasta, dry
For the stir-fry sauce (recipe from my app)
2 garlic cloves
3 tbsp peanut butter, unsweetened
1 1/2 tbsp rice vinegar
1 1/2 tbsp tamari sauce
1/2 tbsp maple syrup
Water to thin
Tray Bake (recipe from my app)
1 1/2 lb yellow potatoes
3 1/2 cup cauliflower
1/2 red onion
1 x 15 oz can chickpeas
1 cup cherry tomatoes
1 tsp yellow curry powder
1 tsp cumin, ground
1/2 tsp paprika powder
1/2 tsp salt
365F/180C for 25-30 min
For the sauce:
1/2 cup coconut yogurt, unsweetened
2 tbsp lime juice
1/8 tsp salt
1 tbsp fresh mint

I do like how you played the music in your previous videos in between shots when you were cooking, chopping, basically the not talking scenes! Your baby has grown so fast omg! 😭 Have a good weekend and thanks for the many great videos and recipes!

Lovely recipes, although it might be better to avoid brown rice as it has a lot more arsenic content than white rice 🍚

While brown rice and cashews have a good amount of some essential nutrients, they don't have much fiber at all. It is the lowest fiber whole grain and has about as much fiber as processed white flour (made from wheat). Cashews are even much lower in fiber with about half the fiber of white flour and brown rice. About as low in fiber as you can get from a whole plant food.
Some people don't want a lot of fiber though, due to stomach discomfort anyway
I want a creamy pasta sauce, so I'm adding cashew cream instead of vegan processed cream (or cow cream) because it has More fiber than those. Not claiming that cashews are fiber powerhouses

Im trying to go plant based any suggestions? How to start? Do I go cold turkey? Im only trying to do plant based for health reasons I've read somewhere for ppl with thyroid issues should go plant based otherwise i love meat so i know its going to be a challenge for me
