    If you are new to grilling and lack confidence try using two bricks to raise a second grate over the charcoal and start with simple foods such as hamburgers, hot dogs, brats, chicken and steak. Turn the food frequently. The height and frequent flipping will negate burning and cook the food slowly and evenly. The char grilled taste from extra time over the coals is delicious. As you gain confidence you can master new foods and skills.

    Don’t ever do the paper lighting over your grill or you will have paper ash in your grill.

    This is my first charcoal grill after a lifetime of gas. ruclips.net/user/postUgkxBPjh-m7-eaAjTEt8BOZRSRRxXqxiI90W The food in it turns out great. Also, the ash remover makes it easy to clean.The base is sturdy and it has ample space inside.I use a chimney to get it started, and it seems pretty efficient. One chimney is enough to cook a whole lot of meat and still keeps burning. If you close the vents it cools down well making it so the coals remaining are still usable as supporting cast members (you still need fresh coals to get them going.I was going to get something bigger, but realized with coal, bigger is just more wasteful and harder to cook with.

      Hank Hill the Weber performer has a propane charcoal igniter, which completely eliminates the need for lighter fluid. Also propane can dry meat out and you don’t get the smoky flavor that you would from a pellet smoker

    Bro I've been grilling wrong this whole time. So my wife got me a new grill last night and decided to do a little research and found this video. Here is my update. ... that was some of the best chicken I've had and by far the best I've made on a grill. While I didn't do bbq I did a kinda dry rub. The 2 zone method was super easy. Super juicy whith a crispy skin. Listen to this man if you want to learn a thing or 2. If I knew how to I would send you pictures of the chicken lol. On another note can you do a video on multi vent grills. Mine has 4 vents and an adjustable coal raiser. How can I best use this grill for maximum use?

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +1

      Well that is fantastic on that chicken bro, good job!! 4 cents just mean more air flow which means a hotter fire. You want to draw the air past the food. Grilling opened above the fire. Smoking closed above fire draw air towards food. Hope this helps bud!! Keep on grilling brother!

    Great video and super tips! Something I wanted to mention, recently I couldn't get my grill to sustain a hot temp very long. It was from 2 things, I used lump charcoal and an off brand chimney starter. While the chimney starter did the job, it was quite a bit smaller then the Weber one. This combined with irregular chunks of lump charcoal, I just didn't get enough fuel in the kettle. It's all a learning experience but I know what to correct next time. Thanks again for the video!

    Dale, I did something back in the day around 2004 that traumatized my wife, I used a small webber barrel grill. i piled on the charcoals, lit it up, waited till it ashed over then I placed a LOG over the top of it.......I saw this log at the corner store STopNGO, looking back, It read firestarter log for longer smoke times......for fire wood camp fires..................FIREPLACE TYPE APLICATION!!! so still not knowing its intended purpose at the time, I went on cooking..............the entire block if not more was in a FOG BBQ SMOKE......the meat had a wood taste and wife was terrified now of me using actual WOOD now. I made a mistake, now 2021, all she wants is straight coals that dont have the wood taste but dont all coals have it?!?!?!? Now I am actually self teaching myself to smoke the right way, and I what Ive seen so far almost always includes some kind of log of wood.........smh Maybe I am venting here, but i need to redeem myself to the wife so I can move forward to advance bbq'ing. Great Video, some cool editing and humor.
    We in texas, if it snowed, well, we still bbq'ing!!!!!

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  3 года назад +1

      Heck ya a couple small chunks of wood is the only way to smoke up some meat! Now those fire starter logs have some chemicals in them but if you buy a bag of Western chunks you are all good!! Yes white foggy smoke will certainly wreck your cook. So the cleaner the smoke the better but in a kettle that can be kind of hard to avoid because the chamber is so small and you can't open up the vents or your temps will skyrocket!! Start with lump charcoal---more chemicals in briquettes than lump. I use both especially briquettes on low n slow smokes in the kettle easier to control!! You got this and it sounds like you are on the right track!!.
      Hhahaha ya I cooked last weekend and it was -10 out when I started ugh!! ha ha Thanks for watching!!

    i just got my Weber 22in Jumbo Joe premium for 74 bucks wal mart on line free ship. assembly took 20 min. great video it helped me with rookie mistakes. kingsford makes different charcoal types. extended burn,hardwood, original, professional----perhaps a video on that subject. making babyback ribs with extended burn or hardwood sounds logical as the charcoal is supposed to last longer. i like the slow cook the ribs .at 220-250% i sold my wood pellet grill at my garage sale--didnt like it this weber is way less expensive and gives better results. looking forward to future videos

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +1

      Great price and I will try to do a comparison video on those different types of charcoal someday!! I have used all of them and I prefer just a bag of the standard blue with some wood chunks. For ribs one normal load on the baskets or a slow N sear will easy be enough. I like to have many different styles of cookers but everyone should own a weber kettle!! How can you not like this video? He talkes the truth. Lighter fluid is nasty shit. The wire brushes are not really going to get in your food but the theme really should be aluminum foil vs steel grates...steel brushes etch the grates and grease sticks faster and faster brushes are fine as long as they're copper, brass, aluminum ect. I dont think lump is harder than briquettes I think lump is healthier but I'll grill with gas or charcoal but the smell of kingsford...its irresistible time to time. Next, saying Weber is better than off brands...couldnt agree more invest in a good weber kettle or dont blame your failure on that damn grill. I grew up in Lake Zurich, IL and went to school for a few years as a kid 1 minute from the Weber plant in palatine, every spring theyd have scratch and dent sales prices 1/3 for a stupid scratch which is all this vid is missing. Whether you have a genesis or a smokey joe get a snug cover for the thing, the sun, moisture, and water will corrode every bit keep that thing protected and will last for decades. Forget the 15 dollar add on and you'll find out how important it is and question why they dont just come with one!

    What order do you add items to the grill. You are having a little gathering. Burgers, dogs, chicken, ribs, steak, veggies, corn. How do you manage multiple items or do you have multiple grills?

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +1

      I have multiple cookers but I always start with things that take the longest like ribs and then start the chicken brats burgers or steaks about 20 mins before we plan to eat. The more you do it the more you get used to the time it takes and can plan around that. I also feed in shifts sometimes, like a 7 course meal. But typically I will have 2 or 3 cookers running so things finish up all around the same time. Good luck and hope you are having a great weekend!!

    If a bristle breaks off from the brush, it is going to just fall off into the grill or you can just tap the grill a couple of times after brushing to be extra sure. I think you are being overly paranoid -- in 50 years of grilling I have never seen a brush bristle stuck to my grill rack. And if you bristle is so small that I can't even see it, I'm sure the heat will melt it right away since you just heated your rack and your fire/coals are now very hot. Sometimes, you have to be practical since grill brushes clean the grill rack better than your way.

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +2

      Well I am not paranoid just stating facts.Here is a nice article from Consumer Reports www.consumerreports.org/food-safety/wire-grill-brush-danger/ now there are some awesome medical pictures if you want to search a little more on the web. Pictures say a 1,000 words. But like everyone says until it happens to you why would you even think of this being a big deal. In my 35 years of grilling I have actually seen wire fibers on the grate. So I no longer just roll the dice and hope it never happens to me or one of my family members by just not using one. Thanks for watching I really appreciate it bro!

    Hi. You mentioned that for hotdogs and hamburgers, the chimney needs to be about 3/4 full, but I can't tell by the video the size of your chimney. About how many pieces of charcoal for just a couple of hamburgers and hotdogs? Thanks.

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  3 года назад +2

      You don't need to count them out bro. Just don't need to use as many. If I was to say 45 but B&B charcoal is bigger than Kingsford so basically there is no answer. What if your burgers are thicker than mine and now you don't have enough. So just use less when you do burgers. Have fun and you will figure out how much you need for the equipment you use. Two things: I use lighter fluid. By the time the coals ash over, the smell and the taste of the fluid is gone. Myron Mixon, World Famous Pit Master uses lighter fluid to fire up his pit. The other thing, I grill all year round. I live in Massachusetts. I've grilled in a Hurricane, pig roast actually, and I've grilled in Blizzards with wind gust up to 50 mph. Other than that, your video was spot on.

    • @DeadBrokeBBQ

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +1

      Thank you!! What I do is simply close off all the vents and I have an ash bucket I store the used coals in after they cool down the next day. Now if there are just a few I leave them in the kettle and dump fresh lit on top. If there is just a few left from a long low N slow cook and I don't plan to use it for a few days I just let them burn out. But I do try to save as many as I can especially after a quick steak cook. Hope this helps and thanks for watching!!

    I have the same BBQ you have and keep the vents open as you do. I am experiencing a problem. My coals don't stay lit. They go out by themselves shortly after I spread them out. This has happened at least 3 or 4 times. I use a coal chimney like you and wait for the coal to be lit like you do. I usually spread the coals evenly out on mine. any ideas and advice??? Very agrivating. Thanks.

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 года назад +1

      Well outside the cooker ventilation is very important also. So if you have to open up the vent more do it. Is this happening during a low in slow cook or grilling? Grilling you might need to have them wide open. Or put a little unlit charcoal at the bottom and pour the kit on top of it and let that get going before you close the lid. I have a nice breeze typically where I cook so the air flow is always good.

    • @scottdacey1858
      @scottdacey1858 4 года назад

      You may be spreading them out to thinly. I bank my coals to one side which forms a hill. as your temp climbs, start shutting down your top vents (leave bottom vent open all the way) 25% every 5 mins, letting temps stabilize between adjustments until you get to your target temp. i've been doing it this way for many years and it has always worked.

    • @DeadBrokeBBQ

    We always had a gas grill cause no one liked the mess of a charcoal grill but they were so wrong cause nothing is better than charcoal, so we got a weber charcoal grill and we got a master weber and I love it.
    I do have a question. How long do you wait for the grill to get hot and ready to use? I love all those great grill marks. You also said that you use only fill the chimney 3/4 for hot dogs, hamburgers etc but what about baby back ribs, etc?

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  3 года назад +1

      I preheat the kettle until the coals are all ashed over and that gives you a good 400 degrees. For baby backs you want to use a basket on one side of the pit and start about 15 briquettes just on one side and then let them cook slow all the way to the other side of the pit. This is indirect cooking. Heat adn charcoal on one side the meat on the other side with the vent over the meat to draw the heat past and over it. you can also do what is called the "snake or minion method" plenty of videos out there and someday I will do a video using that style of cooking. I do have a couple videos showing me use my SnS charcaol basket which mainly helps save time on setting up your grill. Thanks for watching and have a wonderful summer of charcoal cooking!!
