    Khichari is a traditional food in India made in pretty much every home as a comfort food whether any one is sick at home or came back from a long vacation and want to feel as light as possible from all that junk you ate, or if you can't think of anything to cook Khichari is the answer. There are other lentils you can add in there for more protien or nutrients, upto your taste but I love it and always remind me home. We eat it with KHADHI or Chash(made of yogurt), it completes the dish!!

      j mc. Any suggestions for a vegan yogurt? I love almost all the ones I've tried but I am only familiar with flavored/sweetened versions. I am assuming that a plain one would be best with a savory dish.

    It's an Indian dish(i am Indian btw😁). Absolutely a beast of a dish for our stomach(saying in a good way) and nutrition content as well💯.

      @@zaphodbeeblebrox3797 he mentioned traditionally it's made with ghee. Being that it's a vegan recipe he doesn't use it. It's an animal product. I'm not sure if you're mad cuz he did use it but he didn't. Or you're mad because you think he did but he didn't. Either way he didn't he just mentioned it was traditional. Wow

    Try adding a squeeze of lemon before serving. Adds flavour and further helps digest the protein from mung beans

    Yay, I love kitchari 💛 it's so versatile and there are endless possibilities as far as spice and veggie combinations. For anyone looking to make some kitchari, couple tips: usually kitchari doesn't include allium plants like onion or garlic because they can make gas/indigestion worse. That was tough for me because I love alliums. But that's how I learned about the ancient indian spice Asafoetida, or "hing" powder. When cooked, it creates an onion/celery flavor and also has been shown to decrease bloating and gas, so perfect if you're feeling a bit gassy. Some other alterations I make: I toast the spice seeds (usually cumin, mustard, fenugreek, and fennel seeds) in a bit of coconut oil, then once the seeds start popping, I add all the ground spices, then the veggies, broth, mung beans, and rice. Last time I made this, I used potato and zucchini for the veggies and topped with some cilantro and lemon juice🥔🥥🍋💛🥰

      Thanks for sharing the tip about allium. I have just made my first. Kitchari and i did not have all the spices available but i used one garlic just for the habbit of it, but intuitive i added a little of lemon juice on it. Looking forward to eat it.

    I'm from India - the land of Ayurveda. This is my high protein easy-to-make meal. I throw in ground flax/pumpkin/sunflower seeds. Packs solid protein.

    Hi Derek, great recipe!
    Historically khichdi was fed to sick people, since their system is too weak to eat more complex foods.I have a couple pointers straight from the khichdi recipe I've been eating for the part 30+ years.
    - Add asafoetida, it's good for digestion and aides with upset stomach.
    - I think you mentioned this in your video that traditionally khichdi is cooked in ghee. If cooking in ghee - you can flash fry cumin, asafoetida, and turmeric with one whole dried red chili for more flavor and aroma.
    P.S. - Thank you for the amazing videos, I've been vegetarian all my life, but your videos played a key role in putting me on the right path to eat clean and healthier vegetarian meals.

    I love rice! I had had chronic candida, hypothyroidism, parasites and had to cut out sugar,dairy, gluten and white starchy foods but brown rice and buckwheat pasta is good for me so i'm happy. I will be eating more plant-based and cut down meat to 1-2 times a week. So i keep learning about these great dishes thank you.

    Your digestion video helped me so much. I was basically swallowing my food whole because I was always eating while working or while doing school work or 5 mins before I had to be at my other job... Ridicilous... I've made sure I take the time to chew properly and eat slowly since seeing that video and it took about 3 days to start working well but now I have had my gas reduced by half... This is not a joke, my gf threatened to dump me because she couldn't sleep my gas was so bad. THANK YOU from us both! Love you guys!

    Used to eat it when I was a kid. My mom used to make it every 2 weeks or so. The best was vigarelli kitchli which is the left over kitchli which my mom roasted over again with spices. Haven’t had it since and I need to learn to cook it myself. Thanks for the video. 👍

    Wow, never thought I'd see you do a kichari recipe. I spent some years in and out of Hare Krishna asramas, and they prepare this every morning. While living in India, an Ayurvedic doctor told me to eat more meals of kichari to soothe my IBS symptoms. Now I eat it multiple times a week for lunch and/or dinner. It's amazing how well it works!...probably the easiest meal for me to digest.

    I will be making this! Your digestion video has helped me so much. I was in the habit of eating big bites, barely chewing and expecting my stomach to do the rest of the work! It's a hard habit to break but at least now I'm aware of of it and how absurd it is to think that I wouldn't have gas and bloating!!! I love your recipes and all the info you research and impart to us. I always keep an eye out for your latest video.

    I would only suggest adding black pepper, because that has it's own anti-inflammatory properties, as well as synergistically boosting turmeric.

      You are totally correct. I should have mentioned this again (I have in many other videos) but I didn't actually see it in many traditional recipes so I wasn't sure if it had something to do with digestion... although black pepper is supposed to aid in digestion. Thanks for the comment.

    I made kitchari for my youngest daughter after she moved back it she is not vegan and she LOVES it but likes to call it poop soup cause she says it makes things move along.

    I use this all the time. For those with really compromised digestion just use water. Tomatoes and onions (and seasoning/preservatives) often found in pre made broth and can be upset some sensitive stomachs. Be careful with ginger too while usually great for digestion can make some cases of heartburn/GERD worse. Try very small amount in bowl vs pot if you’re not sure (doesn’t sit well you can still eat rest of soup.) Simmer soup on low for as long as possible. 🌱

      Thanks! Yes, there are more natural and nutrient dense foods but the idea here is resting and nurturing the digestive tract with easily assimilated foods.

    This recipe rocks! I've made it several times with varying veggies and even used mashed potatoes instead of rice - delicious! My great-nephew loves it too and describes it as only a six-year old boy could. "It kind of looks like poop and maybe even smells a little bit (broccoli in that one), but it is deelicious!"

    I am from India and it's pronounced as Khichadi here ...I eat this every Sunday and it's the best vegan food which tastes great and takes 10 mins to make

    I learned to make kichuri many years ago from a Hare Krishna practitioner. In Indian dishes, typically when one uses cumin seeds, they are stir fried initially in the pot for a few minutes and then the rest of the ingredients are added. She also added parsley and nuts (cashews). And she used brown rice.

    i heard of ayurveda and learned i was a "pitta" and thats part of the reason why i started eating vegetarian, soon after turning vegan when i realised the health benefits. Thanks for this amazing recipie ! i definetly like easy digestable food videos! i have a lot of issues with my gut no matter what im eating.
    I did feel that mung beans was easier for me, Also edamame for some reason. Really appreciate, this. please more! :)

    Great recipe!! We Indians love our khichri…there is a small variation in the recipe across regions in India, but it is a very popular food across the country…cheap and easy to make, comforting, healing, and nutritious. Thanks for posting this 😊

      Agree with the many comments about asafoetida, which is a strong smelling spice. It is called Hing in Hindi, and available in Indian grocery stores

    Hey thanks for the reminder it’s a great dish you made. Actually if you fry those spices in 1 tbl coconut oil and add it into the rice once it’s cooked it will have incredible flavour. Lovely and healthy thanks again

    All those spices (except ginger) is what I put into the breads I bake. Plus chia seeds and some salt. Now I'm going to try them with your recipe, that will be fun :-).

We make khitchri too...but I love trying new versions so trying yours now. I am making it in instapot though... So lazy.     I will do this in an instant pot with vegetable broth. A little nutritional yeast mixed with the avocado. Great dish by the way. Namaste🙏.

      I always have a craving for just a few drops of fresh lemon juice when I add the cilantro I hate can't help it it just goes together. I don't need to make it sour I just like that little bit of lemon to brighten it. Lemon and cilantro are best friends but so is lime and other Foods LOL I'm tired goodnight

    I believe a little coconut would go very well with it with it taste-wise(even lower in histamines)!
    Just made your spice mix and added some dried stinging nettle powder as well as blackseeds :-)

    I usually soak the rice together w/ the beans for 1-2 hrs then toast the spices & add all the veggies. I add the grains last + 1:8 grain to liquid ratio to make porridge. Overall an awesome recipe, D

My Mom used Mung Beans and some of what Indians call "Toor Dal", which is available at all Indian grocery stores in the USA and Canada. In Whole Foods, it is labelled as "Pigeon Peas". And my Mom sauteed onions, fresh ginger, fresh garlic and the spices in a very small amount of Ghee before adding the other ingredients. It sure is a tasty dish. I eat it with side dishes like fresh green beans or with side of steamed brocolli. Traditionally, we had it with a side of spicy fried potatoes. :):)

    Love that you immediately corrected yourself when taking the credit for the recipe. That's really respectful and endearing.
    Khichdi (pronounced Khi-ch-dee) as every Indian told you already, is just a basic Indian recipe.
    If you want to add fat, heat some ghee at the end, throw in some whole cumin (called tadka in Hindi) wait for it to pop and then pour over the khichdi carefully. Will add some depth to the flavour.
    If you are interested in healing vegan foods, look up Daliya as well.

    Thanks for sharing! If you fry the spices with chilli before adding the rice & beans it will be super flavourful - so you won’t need to add hot sauce at the end 😅

    Carrots are beneficial to the gut. The have a soothing & tonifying effect on the digestive system & also the urinary system so definitely a good thing to include. Thankyou for sharing your recipe.
    Also Mung Beans contain compounds that help to make the blood vessels more flexible & thus reduce blood pressure. I will be trying this. Thankyou.
