How big would you recomend the city blocks to be in terms of units? your city looks amazing!

112x160 is a very decent size for blocks. There is no perfect grid just use what you prefer.

Do we know if this counts as a park in game? I love this video and it's given me lots of ideas, but I don't want to waste time building custom parks every few blocks if it doesn't really count for happiness or land value

As my experience this custom park has no effect on happiness or land value despite it provide walkway for pedestrian. And more tree you have, less pollution, so maybe in indirect way it has some effect on such stuff
