    I'm an old southern great grandma. My meat loaf consists of 88/12 ground beef, finely chopped onions, garlic powder, worchestershire sauce, a raw egg and bread crumbs (that have been soaked in milk to keep the meatloaf moist. Combine all these and put in a loaf pan. I cook at 375 F for half an hour, strain off the grease, add my topping which consists of, Tomato Paste, water, Worchestershire Sauce, about t of lemon juice, onion and garlic powder, salt and black pepper .... add water until it's more of a sauce than paste and cover the top and sides of the meatloaf. Bake another half hour until it's done! My husband LOVED my meatloaf sandwiches before he passed!

    As a 48 year old American, I've also never heard of meatloaf with cheese. But I'm sure it tastes great ;) Meatloaf is one of those things where you will never find 2 households who use the same recipe because we all tweak it to how we like it. It's also not as popular as it was in the past. I might be the only person I actually know who still makes it. My family and I LOVE it.

    I've never had meatloaf without bread crumbs in it. It was - well, at least as far as my mom and grandma thought - a technique for stretching a little bit of meat a longer ways when times were tough (and both of them raised families when times were tough). The bread crumbs allowed bigger portions for the same amount of beef. They also soaked up a lot of flavor in the cooking process, and helped the "loaf" to hold together. A properly made meatloaf, when you slice it, holds together as well as a slice of bread!

    • @BTinSF
      @BTinSF Год назад +13

      Agree it has to have some kind of binder, usually bread or cracker crumbs and an egg (or 2). Corn bread works nicely. You can use stale burger or hot dog buns--any kind of baked thing that makes a sticky mush when soaked in a little milk. It's not just to "extend" the meat. It makes it into a "loaf" rather than just a big hamburger which the NZ family observed theirs resembled.

      Looks like they put bread crumbs to me. Just didn't mention it. Look at the bowl before it's mixed round about 3:45, that's not just onion that's white in there. And I think that's a bag of bread crumbs up against the toaster a few seconds later.

      In our family we would use breadcrumbs, crushed oyster crackers, saltines, or oatmeal mixed in (with 2-3 eggs for binding). What we used was all dependent on what we had in excess at the time.
      Edit: My one friends family would mix a bit of mustard into the loaf mix. Another family would use a bunt pan for their loaf and would have whole hard boiled eggs encased within the loaf.

    Classic meatloaf (as my momma made it) consists of ground hamburger, bread crumbs, onions and eggs all mashed up together (with your seasonings of choice). Then, you put ketchup on it and bake it. You can serve it with sides or make sandwiches with it. Yummy! I only put cheese on it in a sandwich. Variety is the spice of life, so everybody has their own recipe. Glad you enjoyed it.

    Meatloaf is a lot like chili, everyone has their own recipe. Most people add things or substitute one item for another. At the end of the day meatloaf is one of those recipes that originated as a means of using leftover ingredients. It's also a meal that allows you to feed more people using less meat, depending on how many ingredients you mix into it. We add relish to our family recipe to give a bit of tang to it, and personally I like to use spicy barbeque on top rather than ketchup. Lastly, as multiple people have noted, meatloaf with mashed potatoes is amazing.

    Instead of using bread crumbs, try rolled oats. (a Quaker Oats recipe). I make a brown sugar/ ketchup sauce for the top (make extra sauce to pour on it when it's on your plate) then sprinkle sharp shredded cheddar cheese on top of that when the meatloaf is just about done, then bake a little longer. I usually put chopped onion and green peppers in mine. But, there are many adds-in that you can try. Like instead of ketchup try salsa. Think of meatloaf like a large hamburger...Many things you can try. My husband's favorite is when I put pepper jack cheese in the middle.

    We use 1/3 ground beef, 1/3 ground veal, & 1/3 ground pork (grocery stores package it that way). Add salt, pepper, ketchup, dried mustard, & Worcestershire sauce to meat mixture. You can add oatmeal (not instant) with a little milk for more bulk. On top of meatloaf, add thin layer of ketchup topped with bread crumbs before cooking. (I don't include garlic because it overpowers taste of meat.) Some people add chopped green bell pepper. Have rice or mashed potatoes with green beans as side dishes. (I buy meat directly from farmer's market which has much better flavor than what you can buy in grocery store.)

    I used to make what I called a stuffed meatloaf. Make your standard recipe, put half of the mixture in the loaf pan. You can then place ingredients like bacon, and cheese in the middle of the layer, lengthwise. Then cover them with the remaining meatloaf mixture. Make sure that u join the sides together, leaving the cheese and bacon in the middle. When you take it from the oven, let it sit on the counter for approximately 10 to 15 minutes. That gives the molten hot cheese sometime to cool down. Eat and enjoy. Sometimes I make it the regular way, but without the ketsup sauce topping. Instead, I make a gravy adding the seasoning I used to make the meatloaf. Word of caution, hamburger meat doesnt produced the right kind of drippings to make a good gravy, hence the ketsup sauce. Take a beef bullion cube and desovle it. While that is happening fry some onions in butter. After they are soft add some flour and the meatloaf seaoning and fry the onions and flour together to get rid of the flour taste. Then add the bullion water, a little at a time, whisking rapidly as you do. There you have a beautiful gravy. I forgot to add that the onions must be cut to the same size, you decide how big or small that you want them. My family likes the gravy when I pair meatloaf with mashed potatoes. Bon Appétit!

    We used to make meat loaf with onion bell pepper grated carrots and celery mom had 7 kids needed to stretch it out a bit. When I left home hubby was allergic to bell pepper. So started making it with grated apple,onion,grated carrot little bit of diced celery. Crushed crackers, Lipton mushroom soup mix, Worcestershire sauce, beef bouillon, (salt and pepper optional, as soup mix already has seasonings in it) and put in loaf pan. Then make a thick spicy tomato sauce (gravy like) bake at 350 45 min, then add the tomato sauce mix and bake till the sauce is thicken to nearly a glaze. Tomato mixture crushed tomatoes, onion, garlic, little bit of apple sauce, Worcestershire sauce. Pinch cayenne pepper, pinch of red pepper seeds, ketchup, warm till it thickens a bit. I used the apples and apple sauce when I was pregnant to cut back on stomach acid issues. We all loved it and it became a tradition.

    Mix your meatloaf as usual. Instead of putting it directly into the bread pan, lay it on a cookie sheet that is covered with parchment, and spread it very thin. On top of this, spread a layer shredded mozzarella cheese and diced tomatoes, leaving an inch border all around. Roll it in the direction of the length of the pan, so that it now appears to be a meat and cheese filled Swiss Roll. Line the bread pan with parchment paper. Bake as usual. At halfway done, cover the top with shredded mozzarella and tomato spaghetti sauce. Serve it directly from the pan with a spatula.

    The key to a classic American meatloaf, in my opinion, is simplicity. Meat, onions, breadcrumbs, eggs (for binding), seasoning, ketchup (I love to add Worcestershire sauce, too); that's it. A sweetish ketchup mixture for the topping is generally what's done. People like to hide lots of veggies in meatloaf, but for me, basic is just the absolute best. Just have the veggies on the side with mashed potatoes. We like to make mini-meatloaves in a muffin tin so all the sides are crispy.

    Meat loaf was a way to make a couple of pounds of mince feed a large family. Usually you would add a cup of bread crumbs, cracker crumbs, or rolled oats as well as onion and celery for flavor. The bread crumbs or oatmeal would soak up the grease from the cheap meat. Some would add more vegetables. The result was, a loaf that would feed a family dinner with meat left over for sandwiches the next day.
    Usually served with mashed potatoes, boiled carrots, green beans or peas.

    Pure personal choice on how to make meatloaf. So many options. Also, left-overs: make a cold meatloaf sandwich on sliced white bread and mayonaise.

    When I was a child, my aunt was making meatloaf for dinner. I must’ve let out a groan. She said, “well, you haven’t had my meatloaf.” Hers had mozzarella cheese layered in the middle of the loaf. It had a distinctive Italian taste and was the best meatloaf I’d ever had.
    That said, my next comment is how can you eat meatloaf without a pile of mashed potatoes?
    Last, meatloaf makes great leftovers in sandwiches. Enjoy!

      I've never put mozzarella in my meatloaf but I have put Italian seasonings and my favorite tomato based spaghetti sauce in/on it, then served it with pasta and the rest of the spaghetti sauce on the side.

    This is a dish of countless variation. I've used/seen recipes with breadcrumbs added in(I actually use plain oatmeal). Bacon, BBQ sauce, cheddar cheese are usual toppings I tend to use at different times. Even a BBQ, cheddar, bacon mixed with the meat. And more BBQ on top. And as other have mentioned: this goes great with mashed or roasted potatoes.

      I use oatmeal in mine too - as a filler, it's healthier than bread crumbs.

    I've made meatloaf so many different ways over the yrs, I have done the tradional way, with hamburger, Italian bread crumbs, sometimes replace bread crumbs with crushed saltine crackers, onions, bell peppers, used ketchup, cheese on top, cooked it in cream of celery soup (yummy), or cream of mushroom, I usually have mashed potatoes and broccoli, or cauliflower or carrots and Texas toast to sop up sauce....I have put sugar in the ketchup topping for a delightful sweet ketchup flavor, quite tasty!

    Nana made it like a meatball with breadcrumbs and ketchup. Grandma made it with crumbled saltine crackers and BBQ sauce. I bake mine and add mashed potatoes, corn and cheese on top the last 20 minutes of baking.

    • @deanvaillancourt2881
      @deanvaillancourt2881 Год назад +2

      @Bo Lee Yes, it's the same, except I don't call it shepherds pie unless I put a layer of stuffing on it. My shepherds pie layer is the Italian style of meat. Then mashed potatoes, corn, cheese, and then stuffing. Now I have to make it. It's all I'm thinking about now. 🤣😋

    • @bolee3339
      @bolee3339 Год назад

      @Dean Vaillancourt I never herd of stuffing on a meatloaf especially when it comes to Shepherd pie.
      But I actually think it could be a good version or a better version of Shepherd pie.
      Instead of a casaroll it is more of a organic or boogie style meatloaf.
      It all depends on the cook and hom he or she is preparing for.
      Meatloaf is a local food type thing and if you do it wrong in the wrong area then you will receive negative feedback

    I used to make my meatloaf with breadcrumbs and an egg to bind it, diced onion and seasoning. But I usually didn't have breadcrumbs on hand but I always seemed to have a box of Stove Top Stuffing..... now I always make my meatloaf with the stuffing instead of breadcrumbs. My family loves it. I have never made it with cheese...but I'm wondering why I never have??? I love CHEESE, you have inspired me ❤.

    My Grand would put mild cheddar and mozzarella cheese in the middle of her meatloaf. She also, put minced carrots, celery, onions and mushrooms. The side dish was always baked or mashed potatoes along with another vegetable. When she had her famous cheese cauliflower casserole as a side, us kids were in Heaven.

    Best thing about Meatloaf is.... meatloaf sandwiches the next day! I like to add a little mayonnaise with pepper on top on one side of the sandwich and on the other side, add a little ketchup and enjoy a cold meatloaf sandwich!

    I can almost guarantee you'll never run out of variations to meatloaf recipes, the comments alone are filled with great varitions. One thing you missed eating with your meatloaf was mashed potatoes (a must have) and corn or any other preferred veggie.

    I use a "lazy" recipe for making meatloaf. I use one egg, and one pkg. of stuffing mix per one pound of meat (and top it with either ketchup or BBQ sauce). Most meatloaf recipes I seen have breadcrumbs added. By using the stuffing mix you get the breadcrumbs, diced onions, and the seasonings all in one - no dicing or measuring out a bunch of ingredients. A family favorite of mine is my turkey meatloaf. I follow similar to earlier recipe except I use turkey instead of the beef and add 1/2 cup turkey or chicken gravy to the meat mixture as well. Then for the topping I use a generous amount of more gravy instead of the ketchup or BBQ sauce.

    Loving this new find! A few things... that's super basic meatloaf. Add bread crumbs for additional binding. If you want to elevate the meatloaf experience use lean ground beef and then wrap the next one in bacon. Cook covered with aluminum foil and remove foil for the last 15 minutes to crisp the bacon. A secret ingredient, powered mustard! A more common sauce is simply ketchup and brown sugar. And I'm in the Never heard of cheese on a meatloaf crowd.

    Everyone has their own secret meatloaf recipe and I would assume they vary according to regional tastes, here's a Canadian take which is a little different, I learned it as "meatroll Canadiana". Make your secret recipe meatloaf as usual, then roll it out between 2 pieces of waxed paper - length doesn't matter but needs to fit into loaf pan width-wise. Add grated cheddar, diced pre-cooked bacon, fresh spinach and sliced fresh mushrooms - then roll it up like a jelly roll. Bake as usual but you'll have to drain the oil off a couple times as you'll have extra from the cheese and bacon. Let it rest a few minutes after taking it out of the oven so it will firm up a bit. Enjoy :)

    My Mom made meatloaf several different ways. With tomato sauce on top, with a ketchup based sauce on top. wrapped in bacon, or plain and nice and crispy served with mashed potatoes and beef gravy. We never made it with cheese although leftover meatloaf sandwiches are soooo good and I would either eat it in a sandwich cold with mayo or ketchup or make my sandwich with reheated meatloaf and melt a slice of cheese on it. You guys did great. Looked really tasty.

    You can also make your meatloaf and cut potatoes and put it around the meatloaf and pour 1-2 inches of water. Bake at 375 for 40 minutes. The meatloaf and potatoes are done at the same time. When you put your potatoes in your plate smash potatoes with fork and pour some the meatloaf grease on top. May not sound good but it is fantastic.

    My meat loaf recipe has onions whole yellow, celery 2 medium stocks, minced garlic, Worcestershire sauce 1 tsp, ketchup 1/4 cup, 1 egg, 1 tsp salt, 2 Tbs black ground pepper, 4 tsp parley, 2tsp sage powder, 3 Tbs garlic powder, 3TBS onion powder and 3 TSP oregano.
    Then packages of white saltine crackers crumble them, mix into meat and spices, add one egg per 2lbs of meat.
    Smooth in a bread shaped loaf in a oiled plan 3 inch deep
    I cover ( sealed ) with aluminum foil and bake for a couple of hours at 375 ( I live in denver co, this has been used for generations.
    I tend to be very liberal with my spices. I am native american and spanish ( spain ) also danish, scot and german. This came from the german side and the spanish side added the oregano.
    Love your videos, if your ever in colorado denver area let me know, lots of local tips.

    Excellent Fall and Winter food! For one, oven is on warming up everything. We usually have Au Gratin potatoes with meatloaf, so that's your cheesy goodness. Ketchup glaze is pretty standard no matter your recipe. You can make cheeseburger meatloaf, stroganoff meatloaf, taco meatloaf, just add different ingredients. Some use ground turkey meatloaf with turkey gravy for a taste of Thanksgiving.
