  • A festive holiday fruitcake that I promise will not ever be used as a door stop! This fruitcake is moist and full of pecans, cherries, dates, raisins and pineapple as well as a dense rich cake batter that is perfectly seasoned with warm spices like cinnamon, nutmeg, cloves, allspice and mace. I know that you are going to enjoy this one!

    My wife made this fruitcake and I hate it! I hate not eating it almost everyday and I know I will definitely hate it when it is gone! Best Fruitcake Ever! Thank you Noreen......Happy Holidays!

    So delish! I used diced dried apricots, fresh orange zest, raisins, dates, dried cherries and blueberries. Vanilla bean paste. Great recipe!

    My recipe is so close and Im excited to make it for those that LOVE it!!! Reminds me of growing up. I always soak my fruit in dark rum, and brush the loaves for several weeks ... nummm

    I made this for Christmas 2016.
    I loved it but it's fruitcake,and nobody wanted to try it.
    So I wrapped it well and put it in the freezer.
    This Summer,I thawed it and shared it with family and they couldn't get enough!!😁
    It is fabulous!!!
    I already have the ingredients to make it this week!!!

    I think 90% of people who hate fruitcake have never had the real thing. I grew up on it, and make my own every year. It’s very similar to this.

    I made this back before Christmas, but just now getting around to commenting. This was absolutely delicious! I used half golden raisins and half regular, dark raisins, but otherwise followed the recipe exactly. I highly recommend this recipe to anyone who wants a fabulous, moist, flavorful fruitcake that everyone will eat and ask for seconds.

    @TXnineandout At the end of the video I explained that you need to wait until the cake is completely cooled and then brush over 1/4 cup of vanilla syrup or bourbon if you dare. Your choice, personally I enjoyed the flavor of the vanilla syrup and it is a nice alternative if you want to keep the cake kid friendly. I hope you really enjoy this as much as we do. I even got my kids to eat it and they were surprised. The longer it sits, the better it gets! But right away it is good. Noreen

    This fruitcake should have been posted with a warning...DANGER: addictive substance! I made two loaves two days ago, the first is gone of which I shared some with a co-worker who loved it so much he ran off with the other two slices, whilst stuffing his mouth saying "mmm this is delicious" "THIS IS DELICIOUS". Thanks you two for an amazing fruitcake recipe!

    I made this fruitcake day before yesterday and it's delicious!!
    Try as I might,I couldn't find candied pineapple in my town so I used dehydrated instead and it taste fine.
    The cake is moist and scrumptious.
    I'll be serving slices for Christmas Eve and maybe even a slice in the treats that I give my mailman and garbage man.
    This recipe is a keeper!

    I like the candied peel 😂 I mean it's not my favourite part of the cake but I quite like the taste. Maybe it's because I'm British who knows 😂

    Your recipe is very similar to mine, except I add 1/3 cup molasses and use a package of dried cherries instead of candied. Yours looks delicious!

    I am going to bake this cake. I have most of the ingredients and what I need I am going to the store later today for what I do not have. I have made Betty's fruitcake from Betty's Kitchen and it was over the moon delicious. So, I am baking your recipe this evening or in the morning. Thank you for your recipe. As your recipe has nutmeg in it, I will leave out the mace. This recipe looks lucious, also. Have a lovely New Year!

      Mace and nutmeg may be part of the same entity but they actually bring different flavors to the recipe. I highly encourage you to try it with the mace.

    I am so glad I found this fruitcake. It is like old time fruitcakes, full of fruit, little cake. Even the most pricey fruitcakes are more cake with some fruit. I plan on using sweet rum. I poke holes in a very cool fruitcake with a shish-ka-bob stick, or a clean crochet needle. and slowly pour a small amount over the cake. I do the same every couple of days. It could be called Drunkin Fruitcake...lol. But it will last a long time if tightly covered.

    Ok this is the bombdiggity, thank you so much! :-) I didn't use citron or budda hand citrus but I did add a bit of fresh orange rind peel.cut into teensy tiny chunks to mine and substituted chopped dehydrated green kiwi and red cranberry and orange rose colored cubes of papaya so I didn't use the red and green glacee cherrys, and it was wonderfully colorful without high fructose corn syrup.. loved the walnuts and pelicans mixed in! :-) thank you!

      Thanks for sharing the substitutions you made for the red and green glacee cherries. I am highly allergic to corn and corn products so "just dealing with it" isn't an option for me...

    I watched your video. I think you did a fine job. Although, I’ve been making my Grandmothers recipe for over 40 yrs, your recipe has come very close to it. I chop up my ingredients much smaller and I do use pecans. Walnuts don’t have the right taste now feel for me. The only difference is I add a few more ingredients to give it that good old New Orleans flavor.

    I always use this recipe, Noreen!! Making my fruitcakes today and I see how old this video is. Today is 11/26/2022!! Look how cute you are!!🥰 I would love to bake this in a pullman pan.     Hello Noreen! I love fruit cake but have never baked one. This will be one of my desserts for my 2017 Christmas dinner. I made one thing different, I don't like raisins cooked so I have a 6oz. bag of dried cranberries and I will use that. I don't know if it will taste good but I'm going to try it. Thank you for this recipe; it seemed so easy to whip up. Merry Christmas.

      I think it is an acquired taste. I just don't like the citron. Candied peel is alright in certain things. I make candied orange peel and love it. Especially dipped in chocolate! This fruit cake is amazing. I am probably going to make a new video of this recipe but in gem size.

    I am just rewatching this video, related to your new request 😉, and the HFCS issue on the cherries, I give them a quick wash with very hot water over them through a sieve, it gets rid of a lot of that gummy ick syrup that they hold onto. Seems to work for me.

    This is very similar to a recipe I found nearly 15 years ago - and lost! It made 2 loaves of fantastic fruity/nutty 'who needs cake' fruitcake that sustained me for an entire weekend at a sci fi convention (don't ask but oh, those were the days). I love and adore fruitcake and will make this just as soon as I finish eating that butter cake I made the other day. I wonder if you could lose weight just eating fruitcake.       I love this fruitcake! Last Christmas I baked it off in muffin cups and it was awesome! When you do that it is easier to freeze and portion and look so pretty! Like little fruitcake gems! Maybe it's wrong to like your own cooking, but these are delicious! Thanks for commenting!

    I have a question, I'm not sure if you could help but I figured since it's your recipe I may as well try! My cake has been in the oven since 11:28am and it's now 1:44pm and it still isn't finished, do I just need to leave it in longer or will that ruin it or should I take the pan of water out or?     Hi Noreen. I bake your cake every year. Everyone loves it. I used a cup of butter like in the list of ingredients but it looked like only a half cup of butter that you put into the mixer… I’m from another country where butter is packaged differently so maybe I’m
    Mistaken. Can you please clarify the butter measurement? Thanks.

      Patricia Marks I believe you might be referring to Christmas Pudding. Delicious! In Scotland and in England I know put the dough in a cloth that lasts years and years. Many times this cloth is given as a Wedding gift. I love love love a wonderful boiled Christmas pudding. They take time to make and tons of love go into these works of art!

    There is still time to make this amazing fruitcake to serve for Christmas Eve and Christmas day. This truly is a delicious cake. No citron or candied peel is my secret. I hate that stuff and think it truly makes for a disgusting cake. Who wants to eat bitter things on purpose? This cake is sweet and moist and delicious. You can just soak a with a little brandy or a little vanilla syrup or simple syrup and you are going to have a true holiday treat. I promise this will not last long!

    That was a typo in the ingredients list. You should make it the way I did in the video with 1 stick of butter. Not one cup.

    My belief is that there is only one fruitcake in the world and people just pass it around. i.e. My mom gave me one last Christmas, this year I give it to someone else, then the following year they give it again etc

    Noreen, you show in the ingredients that you put in1 tsp vanilla but I didn't see it in the video. Was it put in the ingredient list accidentally or left out accidentally in the video? (It looks so good... I have to try this!)

    @americangamefowl I do like a good fruitcake, though they are hard to find. I hope to try this recipe soon. The problem with your typical fruitcake is that they are very dry, this one shouldn't be

    Nice recipe Noreen. I used your recipe as a template this evening....one pound of nuts (walnuts, pecans, cashews, almonds, brazils and some seeds (pumpkin, sunflower)) and two pounds of fruit (rum soaked raisins, cherries, peel!!!, dried physalis, soft dried prunes, rum soaked fresh pineapple,) because this is what I had in the cupboard. Also a tsp of black treacle (don't worry, its a British thing). I think it has come out very well. Just wondering if you know whether this keeps as well as a traditional rich fruitcake that stores for decades?

    very nicely done. Noreen have you ever wrapped a fruitcake in a cheese cloth soaked in Brandy. I will use your recipe this year for Christmas. Was wondering what u think about wrapping it with brandy soaked cheesecloth.

    Noreen, this looks like a fruitcake I tasted and loved. It was soaked in rum and aged. I assume this one isn't aged. Is that right? Should the water on the oven rack be hot when placed into the oven?

    Hi. Thanks for sharing and Merry Christmas! Have you ever tried adding rum to ur fruitcake? Ur recipe is similar to my moms
    . Her recipe called for rum, but she would omit rum because we were minors. Some years, she made a cake for the adults that had rum.

      +positiveiris You could use the rum during the soaking process where I have used the vanilla syrup. I do not like alcohol in my baked goods so that is just a personal preference. You do what you prefer. You only brush the cake with about a tablespoon of rum every couple of days. too much will make the cake a mushy mess.

    Noreen, I just found this video. I want to try it so bad! But, I don't have either a spring form, or an angel food pan. Can I bake it in just a small glass Pyrex? It'll just be for my husband and myself. No need for fancy. Thanks

      This is a large amount of batter. Needs to have an appropriate pan. Glass is not recommended. You can also make this in muffin tins or in two loaf pans.

      Mace is a very pungent spice. I omit it for this recipe because it overwhelms. That's just me though. It is a wonderful (but expensive) spice.

      No. My recipe does not call for that fruitcake mixed fruit. It calls for a specific type of fruits. Not all of which are in that prepackaged mix. It will not turn out the same and will not be my recipe. I cannot also guarantee the final product because not all of my fruits are candied. The recipe may be thrown off by the high amount of sugar and syrup in the prepackaged fruit. Additionally the fruitcake mix contains a high amount of bitter citron which I personally find disgusting and the main reason that most people who do not like fruitcake do not like fruitcake. However many a fruitcake hater enjoys my recipe. Because the citron is not there. If you want to use the fruitcake mix, please find a recipe that calls for it. But if you have not yet made mine, I suggest you follow the recipe the way it is written for best results. Hope that helps.

      I make mine alcohol free but you can feel free to soak yours in rum but it will need to be wrapping it in cheesecloth, placing it in a tin and giving it a good brushing with rum every week for six weeks prior to giving. Hope that helps.

    It is not necessary to leave the camera on while your mixer is running.

      Really? Wow.....Did you happen to see how old this video is? Very old. I have changed the way I do things now. I am sure you will be happy to hear that.
