Recipe
Makes 2 9-inch round fruitcakes
Ingredients
Fruit soak
1 cup (75 g) diced candied orange peel
1 cup (150 g) raisins
1 cup (120 g) dried cranberries
1 cup (125 g) chopped pitted prunes
1 cup (225 g) chopped candied pineapple
½ cup (150 g) dried currants
½ cup (60 g) dried cherries
¼ cup (55 g) finely chopped candied (crystallized) ginger
1 cup (250 ml) sweet sherry or brandy
½ cup (125 ml) orange juice
1 Tbsp (6 g) finely grated orange zest
1 Tbsp (6 g) finely grated lemon zest
1 Tbsp (6 g) finely grated fresh ginger
Cake
1 cup (225 g) unsalted butter, at room temperature
1 cup (200 g) packed dark brown sugar
3 large eggs, at room temperature
¾ (75 g) cup ground almonds
2 cups (300 g) all-purpose flour
1 ½ (5 g) tsp baking powder
¼ (2 g)tsp salt
¼ cup (60 ml) + 1/2 cup (125 ml) sweet sherry or brandy
1 cup (125 g) chopped pecans, plus an additional 1½ cups of whole pecans for garnish (optional)
Directions
1. For the fruit soak, toss the candied orange peel and all of the dried and candied fruits together with the sherry (or brandy), orange juice, orange zest, lemon zest and ginger. Cover and chill this mixture at least overnight, up to 3 days, stirring occasionally.
2. Preheat the oven to 300 F (150 C) and grease 2 9-inch round cake pans.
3. Beat the butter and brown sugar until well light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the ground almonds.
4. In a separate bowl, sift the flour, baking powder and salt and stir this into the batter. Stir in ¼ cup of the sherry or brandy. Fold the chopped pecans into the batter then add the soaked fruits, stirring well to coat the fruit. Spoon this into the prepared pans and spread to level. If you wish, arrange pecans on the top of the cakes in a ring. Bake the cakes for 2 hours and 15 minutes, until a skewer inserted in the centre of the cake comes out clean.
5. While still hot from the oven, brush the tops of the fruitcakes with some of the remaining ½ cup of sherry or brandy. Brush again one or 2 more times as the cakes cool, then remove the cakes from their pans and wrap well.
The fruitcakes will keep for up to 8 weeks in a cool place, or can be frozen for up to 6 months.

If you don't want to use alcohol, you can substitute apple or orange juice, but if you do you will have to freeze the cake if you want to keep it longer than three days (the alcohol preserves it).
Please can you help by telling me the substitute of Brandy or Sherry?

Hey you can make three! You wrap them tightly after liberally coating them with brandy. Then recoat weekly untill it all eaten.
Thank you for the recipe, my girlfriend made her first ever fruit cake and it was very good, she used most of what you used but didn't use and alcohol.. i don't recall what liquid she used. Actually she's never eaten fruit cake so this was her first ever fruit cake and she plans on making it ever Christmas.. she did research on different fruit cakes and saw some from other countries besides the English version. I've done this style of cake but I prepare it on November and keep it in the fridge. Every week or every 3 days I add a little more brandy so by Xmas Eve it has reached such a sweet and intense flavor but in a good way. It tastes amazing!!! Made these cakes today using an oven thermometer to be sure my oven was correct. Mine came out very dark after 2 hours. They smell amazing but I wish they looked like Anna's!
Traditional fruit cake usually is dark. Some people are colors, Browning or dark sugar for that color.
I just LOVE fruit cakes. I dont understand many who doesn't, really - it's a moist, flavourful treat with booze - what's not to love?!
I think some people had bad experiences with the flavor when they were kids.
I used to make my own fruitcake (specifically, my father-in-law's recipe) many years ago. It is a super recipe, and, like this recipe, it is necessary to soak the fruit in alcohol at least overnight. The problem with that recipe is that it makes 12 loaf pans of fruitcake. Both of my parents-in-law, and one sibling, are no longer with us. My parents are gone. Long story short: no one to give this cake to. There are only the two of us, so this recipe looks like it might be more suitable.

Thanks Anna! My cake turned out delicious. I also added 1 1/2 teaspoons of allspice powder and did the painting with Rum 5-6 times while waiting for cake to cool.😉

In my country, we usually steam the cake for hours. The cake will last longer (although it won't though because we can't stop eating it 😂) Instead of using alcohol, we soak dried fruits in warm water.

Molly O'Rourke traditional Irish fruit cake has Whisky in it and is quite strong, moist and sumptuous. I wish Costco would do the same with their fruit cake it needs some kick.

One thing that wasn't mentioned in the video is that fruit cakes typically benefit from not being eaten right away. With a cake like this, you probably don't want to cut into it for at least a few weeks. The flavours will mellow and meld with a bit of aging, especially if you continue to feed it. It only gets better with time.

My aunt always made us a loaf of fruit cake for me and my uncle when hunting
I make the best gluten free fruitcakes that you will ever find, develop all my recipies myself with trial and error. I use Rum for my cakes or brandy but it has to be french cognac or Armagnac if its brandy, can also be Angelica which is a fortified brandy made from mission grapes still produced here in california which is a exceptional treat for a fruitcake cause its rare and you pretty much cant get it.
