Hello 💕 Yes you can use light brown sugar. It may be a tad less sweet & maybe even a tad less chewy. This is because light brown sugar doesn’t have as much molasses as dark brown sugar. I hope you enjoy! ☺️☺️

I've been making your recipe for the past 3 years, and can say its one of the best Soft,Chewy and Buttery Snickerdoodle Cookie recipes on RUclips. I do have some feedback for those who are trying to make them for the first time and have questions. If you want your cookies to come out moist and squishy like hers, you HAVE to leave your dough chilling overnight, no exceptions. If you don't have time or patience chill the dough for at least 2 hours. If you let your dough chill for at least 2 hours you'll still get a soft chewy cookie, but it'll have a slightly more cakey inside. Please use some real unsalted butter if you can buy some at your grocery store, trust me it will make a massive difference in your final product. If you can't find any I sometimes make them with the Imperial brand Vegetable Oil Spread that is supposed to be like unsalted butter and they still come out really good. Like she said make sure it is softened, not melted. if you fully melt it in a pan or microwave you will get something completely different in the end. If you don't have a mixer you're going to need a whisk to fluff up and mix your batter because if you just do it with a spatula its not going to look like hers and end up coming out super watery and runny. After whisking the dry ingredients I like to do one extra step and sift the flour into the wet mix in portions to avoid it clumping up. Make sure you are scraping the sides of your bowl when you are mixing them, its a very important step a lot of people don't do for some reason. Please get a decent restaurant or industrial grade baking pan. The first year I tried this recipe I made them on a crappy dollar store tray and could not get the cookies to look like hers at all, no matter how many different bake times I tried. They would either be super undercooked, or overcooked with a burt bottom. As soon as I upgraded to a quality baking pany cookies finally started looking like hers. Soft and squishy at the tops with a light golden brown crust under that doesn't turn rock hard the next day. This one is optional, but if you want the best cinnamon flavor for your cookies get some good cinnamon. If you use really cheap cinnamon your cookies will have that cheap artificial taste that you'd find in like the Walmart/Target brand baked cookies. Finally, please don't overcook your cookies. We're trying to make soft and chewy Snickerdoodles, not rock hard ones. When your oven finally gets to 350 let it sit at that temperature for at least 15 minutes so that the heat can evenly distribute at that temperature. Lastly, test your first batch of cookies at around 8-9 minutes. For my oven 8 minutes is the sweet spot for getting soft and chewy cookies. Letting it get near 10 minutes will make them cook fully and they end up not coming out like in the video.

Mine come out very light and fluffy, staying puffed up. I'll have to look at the recipe to see what's different. The way my snickerdoodles come out, there's zero calories because they're more like light, crumbly air... and we all know air doesn't have calories! Great for the diet!! 😁
The last recipe I used was similar to this (375 10-12min) & mine got hard once cooled. Whats the trick of when to pull these out? My center looked doughy/uncooked after 10 min & I probably over cooked. What should the center look like?
They should be puffy & fall after a few minutes. They should remain soft. I’m not sure why yours came out hard. I would need to see the recipe you used 💜
