If I interpret that correctly, in all your examples you are turning the New Blend option off. If the switch is positioned to the right, it's on. To the left it's off.
The blend tool has been broken since forever. I actually did some designs that involved having the jerkyness in them. I just hope Adobe would refresh more tools. Imo this should be done years ago.

Yeaa, this issue put some limitations on this tool for a long time now, finally they are working on it
My next big wish is illustrator 16bit color depth tho
