Jenna Ortega did an interview where she talked about the blinking. When it happened it was specifically placed over Wednesday dealing with emotions she doesn't wish to. Most of the time the crew didn't want her to. And if she did it was a ruined take or to be SFX out later, but they'd rather not do that as the face is so hard to SFX.
Apart from Odin (Scandinavia) and Wotan (Southern Germany), he was also known as Uuôden in Saxony and, importantly for the topic, Wōden in England. In Old English his day was Wōdnesdæg, which in time became the Middle English Wednesdei and eventually the modern incarnation, Wednesday.

A goth emo tortured soul who lived in gloom, despair, and shadow and railed at the world, producing brilliant fiction based off of his tortured soul's view of the world. And history bought the bullshit, hook, line, and sinker. But Poe was nothing like that at all by all of his friends' accounts. Edgar Allan Poe, from all non-Griswold sources, was incredibly clever, sharp wit, bright and bubbly personality, got on well in society, and was the first American to be able to support himself 100% from his writing sales. Poe just knew what the reading public liked to read, and his work was insanely popular, but that was the extent of where the 'insanity' stopped. So now you know... spread the real truth -- Edgar Allan Poe was nothing at all like Wednesday Addams. In real life he was far more of a Cedrick Diggory. Whoah, that's nuts. Thanks for sharing this. There's so many historic figures that get a bad reputation and are completely different than what we think. For example there are rising theories that Elizabeth Báthory (the bloody countess) didn't do most of the stuff she's accused of doing (bathing in the blood of virgins), and it was all a smear campaign by the surrounding landlords to ruin her and get her land. She was basically left alone after her husband died and was easy prey.
I read somewhere that Edgar Poe didn't like and didn't use his "Allan" middle name because it reminded him of his father , but after he died Rufus included the Allan in the obituary out of spite. Now everyone knows Poe by the name he hated. I don't know how true this is tho

He went mostly by Edgar Poe in his lifetime, and the same Rufus Griswold added Allan into his memoriam materials. From there it caught on the same way that everyone said "Ralph Lau-REN" in the 80's (vs. Ralph LAU-ren as we know the family pronounces it now). Edgar Poe was deceased and couldn't correct us. He was taken in by John Allan and wife when Edgar was 2, and if he referred to Allan in his name at all he just used it as the initial A. Edgar A. Poe. On official records and such. Early on in shooting the series, Tim Burton noticed that Jenna Ortega didn't blink during one of the takes. Jenna didn't realize that she hadn't and Tim took her aside and told her to not blink as much as possible. That's why you rarely see her blink. Any blinks you see were during early shooting.
All the Sirens have the same watery blue eyes with a darker ring on the edge, so yes it's contact lenses. But I have a cousin with eyes like that, so it can be natural.

Personally, I have seen amber/very light brown, grey and blue. I can imagine there were more in the past but the primitive people would have had them killed/wiped out, out of fear.

Tuesday is Tiw (Tyr) 's Day. Sun, Moon, Tyr, Wotan, Thor, Frey, Saturn. Those are the Gods of the Days of the Week, English style. :)
Woden is the Old English form, Wotan is German - same as Tag for "day". Old Norse lost 'W' before "o" or "u" which is how you get Odin.
the old Germanic spelling for Wotan could be spelled at Wōdan or Wōdanaz so that might be where the D comes from in Wednesday.
