- Today was a very cool day, I harvested some of our first zucchini squash from our spring garden AND used them to make a 100 year old zucchini bread recipe that the whole family loved. I hope you love it too!

Zucchini Bread Recipe:
3 eggs, 2 cups sugar, 3/4 cup oil, 2 cups all purpose flour, 1/2 tsp. baking powder, 2 tsp. soda, 1 tsp. salt, 3 tsp. cinnamon, 2 cups peeled, grated zucchini, well drained, 3 tsp. vanilla, 1 cup chopped nuts or 1/2 cup each nuts and raisins.
Directions: Grease 2 (9x5x3 inch) loaf pans. Blend eggs, sugar and oil. Add flour, baking powder, soda, salt, and cinnamon and mix well. Add zucchini and vanilla. Add nuts (and raisins if desired). Bake at 350 degrees for 45 minutes or until bread springs back when lightly touched or tester inserted in center comes out clean. - Развлечения
I learned this tip from a friend over 30yrs ago.. when you take your nut bread out of the oven, brush on some soft butter and sprinkle on a mixture of sugar and cinnamon then let cool. Gives it a little extra something. I haven’t consumed sugar for more than 5 yrs but I remember my children loved nut breads that way. My daughter used to hide zucchini in pancakes, breads, lasagna, etc. and my grandchildren never suspected.
I love watching Alora, as well as the other kiddos, getting to grow up with an understanding of how family should really be! Conner's comment at the end was PRICELESS! 🤣🤣🤣🤣🤣🤣
Have a blessed Easter. I usually, if I have too much zucchini, will shred and freeze in two cup servings, just to be able to make zucchini bread. It looked yummy and Connor's reaction was so funny. Enjoyed your video.

My Granny taught me how to make it when I was around 11. It is so yummy. It’s is wonderful you got to use the zucchini you grew yourself, and that Elora was so excited about when she got to pick the first zucchini. A great video, as usual. A trick I pass on to my little bakers is to use the eggshell itself to remove any pieces of shell. Zucchini cake with cream cheese frosting is so good too.
I normally do but it was a big one and I could just easily snag it 😁

This recipe sounds like the one I use. I haven't made any for quite some time, but use to make it at least once a month. I can smell it now 😋. I guess I better get busy and make some good ol Zucchini bread. Thankyou Steph and Elora you did a great job.
My mom made this all the time. She put choc chips in it and it was our fave! She also put zucchini in a choc cake to give it additional moisture and no one ever knew! 😁

Steph, use the same recipe for zucchini bread but after you mix it up make cup cakes. Good for snacks for the kiddos and to take to track meets and baseball games. I did this for my boys during wrestling season. You can also freeze the zucchini after you shred it…don’t drain.

Years ago, I was at a church function and we all were having fits over this fabulous bread. Eating it as quickly as your son was doing. Then we were told it was zucchini bread. Good stuff and so very moist.

I like these 100 year old recipes. I looked at 6 other channels for this and they were all trying to outdo the other by adding things. In my opinion, the traditional is better than seeing how much chocolate you can put in there before it falls apart.

My grandmother made zucchini bread. She put chocolate chips in hers. She would wrap it and keep in the fridge, which kept it super moist. She also made the best beer bread.

Norma here. Just found this video that I never finished watching. The 100 yr old recipe for sweet zucchini bread sounds delicious. I have an old recipe using zucchini in a savory quiche that is delicious too.

Steph it's so nice to see Elora & you working side by side baking. That will get her along way when she gets older moves out and married that all the things you cooked or baked she will cherish. Help her to know basics of cooking. Reminds me of me being a little girl and my great aunt who raised me we did same thing. I remember her recipes and all. It does help. There is pride in making food for your family that you have grown. I have a old recipe, very similar to yours. I don't peel the zucchini. One day, I decided to zest some orange into the batter, and oh my gosh! I don't measure the zest, I go by looks. It's a game changer. You should try it.

I love this Stephanie! Growing up my mom didn't want me anywhere near her kitchen when she was in in.I don't have any memories of cooking with my mom. However any time that we had a vacation from school I would spend the vacation in Vermont at my grandmother's house. My BEST childhood memories were spent with my grandmother. I've got to say...from what I can remember this sounds just like her recipe for zucchini bread and I absolutely LOVED it! Elora is a very special and fortunate little girl and you and Buddy are making some awesome memories for all 3 of your kids. This video brought me back to some very special days I had. Very surprising to see a recipe that is also in my great-grandmother's handwritten cookbook. She was born in 1845. It is almost impossible to read but so precious.

I love Zucchini bread. I made some a few years back because I normally make pumpkin bread which my grandson's prefer. But when they were young I made the Zucchini bread and they did like it. But when I mention it they say no grandma what about your pumpkin bread so that's what I make. My grandson's come first.😊 even now when they are in their 20's and I have a great grandson now and he plays baseball. So they come first even now. I'll have to see how your 100 hundred year Zucchini bread turns out. Love and hug to you all😊❤

A lot of the food I learned to cook from my mom didn't have recipes. I finally started to measure them. After a lot of trial and error, I finally got them down and love them. My grandmother's cook book is a lot like the recipes in your book. No measurements and vague directions. She knew what was needed. I guess that was fine for her.😅😅
I have my Grandmother's handwritten recipe book. These are her recipes from when she was a cook at Northern resort here in Ontario Canada back to 1930. She then went on to be the pastry chef at a high end Hotel in Whitby Ontario during the 40 to to 60s. She was sent over from England when she was 12 years old as a Bernardo child in 1900. Her Mother could no longer care for her so she was made a ward of the State. All these recipes ate in her own handwriting. I cherish this book. Full in English based recipes. Some ingredients I have never even heard off.

@The Denman Homestead she is the woman I strive to be. She was left with my Mom and her 3 brothers all under the age of 7 to raise on her own after my grandfather died from lung disease caused by Mustard Gas while serving our country during WW1. She kept her wicked sense of humour through all her trials in life. I still remember her infectious laugh. And she passed in 1979.

I had a very old recipe book of my Mum's that I passed on to my son a few years ago. Its a CWA recipe book...In Australia we have The Country Women's Association, where country women can meet up to support each other as well as fund raising for various charities. It has some very interesting recipes which I'd say are unique to Australian

The 100 yr old recipe looks wonderful! I'd just sub the white sugar for molasses n brown sugar or honey. And Oat flour for the white. And add dark chocolate chips! Choc zucchini cake is delish too. With you're home grown beautiful zucchini!

I think the zucchini is a replacement for the liquid. I have a recipe for raw apple cake that is similar. Congratulations on being able to use your homegrown zucchini!
I love zucchini bread, cookies, and pies. I add chocolate chips, bananas, blueberries, apples, etc. The zucchini keeps it fresh and moist. Freezes well. Both before cooking and after cooking. I drain mine through a strainer lined with cheese cloth. When I need a filler in any pie or cookie, I use zucchini. Only down side is that in summer heat, it will mold faster. So, store in refrigerator.
My recipe is from 1898 family. Hand me down.
It calls for 1 cup sugar to every whole zucchini stalk the length of your hand. Chopped tiny pieces.
1 cup bacon fat, or lard
1 egg each
1 cup flour each stalk
1 teaspoon baking soda each.
1/2 teaspoon baking powder each
1/2 teaspoon cinnamon each stalk
Pour vanilla until you smell it. Mix up really well. Bake in a nice red bed of coals in a buttered pan until golden color and center look cooked.
My great grandmother usually used a cast iron Dutch oven. My grandmother changed the recipe after 1930ish to bread pans oil and an electric oven at 350. Seeing their notes alongside the actual recipe on what looked like onion paper is so cool. Old recipes seem to use less sugar, salt, and weird measurements. I started adding things like nuts, chocolate chips, apples, and blueberries in 1976. Still use the same modified recipe from ages ago.

Yum, this is so special. I had a cook book that my grandmother ( who was born in 1890) won in a baking contest. It had to have been in the 1920's. Anyway, it is really cool I passed it on to my niece Katie. I didn't know that about cinnamon. Pretty cool.

FYI.....grate your zucchini, then freeze it. When you want to use it, then allow to thaw & put it into mix. Do not drain! Also, lightly coat the nuts or raisins with flour. This helps them from sinking during baking. ❤

Alora is such a big help. Zucchini bread is one of my favorites. My mom adds crushed pineapple to hers and puts it in a 9x13 pan you can put a cream cheese icing on top it's delicious.
