Play about with it; different SAMs seems to have different ranges. You will know it's too far when the launcher fires, then the missile explodes almost immediately.
one thing to add (though i really need to re-test this to see if anythings changed after multiple updates) if you add many SAM's in a group they will all track 1-2 targets... make many smaller groups to be able to attack multiple threats

Yeah that's a thing, see the end of the Roland vid for proof of 9 launchers in a group.
I think SAM batteries located at airfields enjoy unlimited supply, drawing ammo from the airfield warehouses.
I still usually put a supply truck there for the aesthetic, but as long as they are close enough then they probably do use the warehouse.
