I never liked flan or caramel pudding or caramel custard, so I never made it before. Homemade caramel pudding always had that eggy taste, so i never liked. I've lived in Texas, California and Arizona, I've tried Mexican flans from a lot of stores and shops in these 3 states and they're all either bland, too sweet but no flavor and a lot of add in ingredients that are not natural, or taste kinda like " cardboard" or "eggy " like the other commentators here mentioned. I love a great creme brulee from Flemings but they're too pricey to have when I have my cravings for a little piece of dessert. So I thought my to go close to a Brulee is a Mexican flan but it's always a big disappointment. Then I was invited to a birthday party and one of the guests bought several Filipino Leche flans that I thought were egg caramel custards. I asked the host of the party and she explained what they are. Tasted it and oh my gosh, it's almost like Flemings' expensive creme brulee but creamier and flavorful in its own authentic ways. So I started looking and calling for a Filipino shops here in AZ if they are selling Leche flans everytime I have a big craving for it instead of spending too much money in Flemings.
The good ones are usually because they're using the same volume as whole egg recipes, but with only yolks. Removing the egg whites result in a softer creamier flan overall.
classic mexican flan has the exact same ingredients. One can of condensed milk. One can of evaporated milk. Caramel. And finally, your favorite egg yolk to white's ratio
I copied this exact recipe and steamed mine on low heat for 60 mins but they were not as creamy as shown so I tried it again, same recipe but this time I steamed for 45 minutes and they came out perfect
You can make leche flan from the left over egg whites. Just double the milk you use. You can also add Milo to the mixture (optional). It will turn out pale but if proportions of the milk is right (adjust consensed milk for sweetness) Make sure there is enough of the evaporated milk that when mixed, it does not look and feel thick. More milk lessens the eggy taste, avoid expanding of the egg when cooked and provide the creamy texture.
If you don't have a steamer, you can use one of those aluminum pie pans. Poke holes into it, then put it inverted inside the pot with water. Anything you can find that can elevate the container for the leche flan is okay, as long as the water isn't higher than the container.
Our Filipino Leche Flan is the best version. I landed here in the US way way back. For the first time in my life, i tried "other countrie's flan". I was like, "definitely not the version i grew up with". I like our version way way way better since my toungue is used to the sweetness coming from condensed milk and caramelized sugar.
I have never tried flan this perfect, Thank you for making this amazing recipe. I kind of messed up by putting a table spoon instead of a tea spoon of vanilla but it was still so delicious!

I make leche flan this velvety also but I bake it in water bath. My family and friends love it. Melts in their mouths too. I have not tried steaming. Yours is very yummy!

I will never forget how I was always trying to find a way to get my hands on flan ever since I was like 7 or so because of that flan episode from Courage the Cowardly Dog. I'm a young adult now and I have yet to get my hands on one. I won't let this go until I finally eat it. It's been over a decade.

If remember my late abuela's leche flan she uses dayap (Filipino lime) and instead of chicken egg she uses duck egg. *It melts in your mouth.* Hmmm...I am craving for leche flan.
Do not put lemon juice in your mixture 🤦. It can curdle the milk and affect the texture. It can also give it a bitter sour taste (mapakla in tagalog). Instead grate lime zest before you sift it. That'll give you the brightness to cut down the richness of the flan.
I loveeeee leche flan with lime zest. I grew up eating that version of leche flan. Imagine my surprise nung nalaman ko na a lot of people don't do that pala hahaha. They're missing out!

haha, i think filipino leche flan is the best! the smoothest, richest, no bubbles! it's always my contribution to family parties but i get nervous every time i make it!

Probably because I don't have a proper double boiler thing so I put the dish in the oven on a tray of water... although that's not really the part that gives me butterflies... it's always the flip when you put your dish on the mold and flip it over onto a plate! It's actually never gone wrong but that's always the part where I feel everything could slip and I might flip it onto the floor or all the liquid might spill. LOL. No offense to your question... it was a good one! PS Also since I usually make these flans for parties, I might push the limit on their size and they're a bit larger to flip!

@@daydreameraj9777 , you can use a wok or a double Dutch pan/casserole (not sure how to classify it) . Place a water-filled alum round cake pan in the middle. Then place the pan-filled (1/2" below the rim) leche flan mixture on top. To bake, put hot water in a 9"×10" lasagna pan. Carefully put the pan or llaneras, making sure they are not submerged. Bake in a pre-heated oven, 325°F, 1 hr or until a toothpick inserted in the middle comes out clean.
Followed your recipe last & i love it! By the way for the whites, I made a cheese egg something (I just made it up). It turned out great! I grated carrots on the egg whites, added a bit of condensed milk, then stirred slowly until combined. Also added spices & seasoned it (parsley, pepper, salt, powdered beef stock). Stirred. Then while frying, I flip just one side and added cheddar cheese on top. Poured egg mixture to the vacant side then repeating process until all mixture is done (flipping only one side every time). After it’s done, I covered it and saved for breakfast & today, I made fried rice with it. My korean husband says it’s delicious so I’m happy. 🫶

We kapampangans (Pampanga) use duck eggs intead of chicken eggs, we put (dayap) or filipino lime grated into mixture, a teaspoon of vanilla, brown sugar instead of white. 😊😊😊 So yummy 😋

Traditional is you use balat ng dayap. Unfortunately i have not seen dayap being sold in markets for a long time now. And my grandmother never used condensed milk. Most of the time the taste of the condensed milk ovew powers the egg. Oh btw, duck eggs are so much better.

I’ve had Mexican flan before, not sure if it’s all the same but their flan is very different from Filipino flan, it’s almost like bread, or eggy? Not sure how to describe it but it’s not as creamy, and doesn’t “melt in your mouth”

for anyone that doesnt want to add eggs replace it with heavy cream and agar agar depending on the portion you're using just a disclaimer agar agar is too strong so you gonna need around 9 grams per liter unlike eggs you want your mixture to boil to activate agar agar if you want to use eggs just add less eggs to make it closer to the original after you remove the custard from the stove slowly pour mixture in the beaten egg and after the eggs have taken the temp of the custard combine and let it set at rt for 40 to an hour

I've lived in Texas, California and Arizona, I've tried Mexican flans from a lot of stores and shops in these 3 states and they're all either bland, too sweet but no flavor and a lot of add in ingredients that are not natural, or taste kinda like " cardboard" or "eggy " like the other commentators here mentioned.
I love a great creme brulee from Flemings but they're too pricey to have when I have my cravings for a little piece of dessert. So I thought my to go close to a Brulee is a Mexican flan but it's always a big disappointment.
Then I was invited to a birthday party and one of the guests bought several Filipino Leche flans that I thought were egg caramel custards. I asked the host of the party and she explained what they are.
Tasted it and oh my gosh, it's almost like Flemings' expensive creme brulee but creamier and flavorful in its own authentic ways.
So I started looking and calling for a Filipino shops here in AZ if they are selling Leche flans everytime I have a big craving for it instead of spending too much money in Flemings.

The good ones are usually because they're using the same volume as whole egg recipes, but with only yolks. Removing the egg whites result in a softer creamier flan overall.
classic mexican flan has the exact same ingredients. One can of condensed milk. One can of evaporated milk. Caramel. And finally, your favorite egg yolk to white's ratio

I copied this exact recipe and steamed mine on low heat for 60 mins but they were not as creamy as shown so I tried it again, same recipe but this time I steamed for 45 minutes and they came out perfect
I heard from an expert that if you overcook or undercook the flan idl loose the creaminess...So I do believe 45 mins is perfect.
maybe you don't have the same amount of leche flan mixture as hers, that's why 60 mins made your flan overcooked.

You can make leche flan from the left over egg whites. Just double the milk you use. You can also add Milo to the mixture (optional). It will turn out pale but if proportions of the milk is right (adjust consensed milk for sweetness) Make sure there is enough of the evaporated milk that when mixed, it does not look and feel thick. More milk lessens the eggy taste, avoid expanding of the egg when cooked and provide the creamy texture.

If you don't have a steamer, you can use one of those aluminum pie pans. Poke holes into it, then put it inverted inside the pot with water.
Anything you can find that can elevate the container for the leche flan is okay, as long as the water isn't higher than the container.
Or you can use a pizza tray thing which as holes, colander, or baking tray which is meshed etc and close the lid

I will never forget how I was always trying to find a way to get my hands on flan ever since I was like 7 or so because of that flan episode from Courage the Cowardly Dog. Do not put lemon juice in your mixture 🤦. It can curdle the milk and affect the texture. It can also give it a bitter sour taste (mapakla in tagalog). Instead grate lime zest before you sift it. That'll give you the brightness to cut down the richness of the flan.

Probably because I don't have a proper double boiler thing so I put the dish in the oven on a tray of water... although that's not really the part that gives me butterflies... it's always the flip when you put your dish on the mold and flip it over onto a plate! It's actually never gone wrong but that's always the part where I feel everything could slip and I might flip it onto the floor or all the liquid might spill. LOL. No offense to your question... it was a good one!
PS Also since I usually make these flans for parties, I might push the limit on their size and they're a bit larger to flip!

@@daydreameraj9777 , you can use a wok or a double Dutch pan/casserole (not sure how to classify it) . Place a water-filled alum round cake pan in the middle. Then place the pan-filled (1/2" below the rim) leche flan mixture on top.
To bake, put hot water in a 9"×10" lasagna pan. Carefully put the pan or llaneras, making sure they are not submerged. Bake in a pre-heated oven, 325°F, 1 hr or until a toothpick inserted in the middle comes out clean.

By the way for the whites, I made a cheese egg something (I just made it up). It turned out great!
I grated carrots on the egg whites, added a bit of condensed milk, then stirred slowly until combined. Also added spices & seasoned it (parsley, pepper, salt, powdered beef stock). Stirred.
Then while frying, I flip just one side and added cheddar cheese on top. Poured egg mixture to the vacant side then repeating process until all mixture is done (flipping only one side every time).
After it’s done, I covered it and saved for breakfast & today, I made fried rice with it. My korean husband says it’s delicious so I’m happy. 🫶

Traditional is you use balat ng dayap. Unfortunately i have not seen dayap being sold in markets for a long time now. And my grandmother never used condensed milk. Most of the time the taste of the condensed milk ovew powers the egg.

I’ve had Mexican flan before, not sure if it’s all the same but their flan is very different from Filipino flan, it’s almost like bread, or eggy? Not sure how to describe it but it’s not as creamy, and doesn’t “melt in your mouth”

egg whites can be cooked as well like leche flan, add 1 can evap tall and a cup of sugar, lemon zest , vanilla, need to mix thoroughly, strain it, just use again the same container usually there are still caramelized sugar on it left, this is reach in protein good for those with kidney problem, if you are diabetic substitute stevia as sugar or just add 1/2 cup sugar

for anyone that doesnt want to add eggs replace it with heavy cream and agar agar depending on the portion you're using just a disclaimer agar agar is too strong so you gonna need around 9 grams per liter unlike eggs you want your mixture to boil to activate agar agar if you want to use eggs just add less eggs to make it closer to the original after you remove the custard from the stove slowly pour mixture in the beaten egg and after the eggs have taken the temp of the custard combine and let it set at rt for 40 to an hour
