      I am not sure what we are making for New Year's Eve. I have a broken femur and can't stand on my leg and have to use a walker. Which I can't stand very long to cook. I am trying to figure out something delicious but easy. My husband wants boiled shrimp. I know I will be making that.

    I've just made it with my leftover risotto. I haven't used peas and lemon zest though. It was still delicious. Air fryer made it healtier 🤗 Thank you for the recipe! I've just discovered your channel. Can't wait to try other air fryer recipes 🤩

    I've never had arancini, but it sounds and looks wonderful! I will confess ahead of time that I plan to cheat and make the risotto in my Cosori pressure cooker.

    Been Italian my whole life from Naples, never I mean never are there onions in arancini (rice balls) where do you get your recipes from

      Hi Joe! I developed this recipe and decided to add onions in the arancini because I loved the flavor it brought to them. You can definitely remove the onions if you prefer:)

    This looks amazing and I’d like to try it in my dual blaze Cosori air fryer. Should I use the crisper plate? Also I went on the website to try to print off the recipe but there is no printable recipe. All I get is pages and pages of what I see on the webpage with the photos and more stuff that I don’t want to print. Please tell Cosori to make these wonderful recipes printable!

    Now that I've made a snarky comment, I do have a question. Can these be frozen for later use? If so, at what stage would that be done? I should add that my wife and I love our Cosori and we also love arancini, so I will definitely be trying these to surprise my wife. We won't be eating 20 at a time, so I'd like to hold some for later.

      Yes you can freeze them! I would suggest air frying all of the arancini, allow them to cool completely, then wrap in plastic wrap and foil and freeze for up to 3 months. To reheat, thaw them for about 10 minutes before air frying at 350F for 5-8 minutes until crispy and warmed through.

    Putting hot rice directly into a refrigerator like that will cause the ambient temperature inside to go up and cause potential bacterial growth on nearby foods. Wait till the rice is room temperature before it goes in the fridge.

    When making Arancini, no garlic and you're not cooking a risotto. Just cook the rice with all the liquid.
    and it should be al dente. Also no wine. OMG, the peas don't go in the rice but in the filling. You really don't know how to make a true Arancini.
