  • Waffle irons for the fire are amazing. You can of course do waffles, but also grilled cheese sandwiches, or in this case, a hash brown! Some cool trivia is that waffle irons, constructed exactly like this, have been around since the Middle Ages.
    It can't get more Swedish than this flavour combo! A potato waffle topped with gravlox, horseradish creme fraiche, red roe and dill, with a little side salad of radishes and sunflower seeds.

    Potatoes, shredded with pepper and salt
    Butter
    Creme fraiche
    Horseradish, shredded
    Gravlox
    Red roe
    Dill
    Side salad
    Greens
    Radishes, sliced
    Sunflower seeds
    Olive oil, salt & pepper
    Put the waffle iron in the fire to heat up. Let the seasoned shredded potatoes sit for a bit, and then give them a good squeeze to get rid of as much liquid as you can. Butter up the iron and spread the potatoes evenly. Flip the iron once in a while, so that both sides cook evenly. All in all will take around 10-15 minutes.
    Mix shredded horseradish with creme fraiche. Make the side salad.
    When the potato waffle is done, top with gravlox, horseradish creme, roe and dill. Serve with the side salad.
