lucabaly there are kits on eBay with everything you need. Alternatively you can buy cannon intakes or Ireland racing intakes separately and look for good used carbs on eBay and rebuild them yourself with gasket kits (it's fairly easy). If you go for it and need some help on carbs jetting and balancing let me know.
Danny Bouwhuis yes it's doable, remember that you can always do trial and error with different size venturis, pump jets, idle jets etc and also keep them well balanced and a proper fuel/air ratio. Now if your country has a gasoline price problem I wouldn't recommend using a motor with double DCOEs in your daily driver.
I haven't taken it to the dyno, but the difference is substantial, especially if you install decent headers and a good exhaust system. It breathes a whole lot better.

Josh Gurr there's not a kitchen recipe for co2%, I did it by trial and error by adjusting the mixture screws half a turn at the time starting from lean and getting to the point right before rich. lucabaly there are also single Weber conversions that are practically plug and play for the M10 engine and are cheaper and easier to do if you want to keep your engine stock
lucabaly Weber 32/36 would be a perfect fit. Weber 38/38 is more performance oriented and I think would need mild modification of your intake manifold.
I would like to put some 40 Weber,don't know if only 1 or a couple...I'm watching on ebay but i found only some triple 45 kit for the 320. If you have some link,can i have it ??

Danny Bouwhuis I use 130 main jets with F16 emulsion tubes. 65F8 idle jets. Fuel consumption is BIG.

For M40 motors you need ITBs rather than carburetors.
