Hey dolcelis! Thanks to your videos i went to giolitti in septembre! Thankyouu it was so good :))) i also found a good restaurant near the vatican and it wasnt expensive or touristy at all. Just at a 6 min walk.. but i dont know the name lmaooo! We just bumped into it after another restaurant i found on youtube was actually closing because of their siesta/family time. So we walked through the neighbourhood and boom, there it was. Didnt look superfancy so i was already hoping it was good and it was kinda good. I had pasta with bottarga, thats fish eggs right? Anyway i will try to find the name again and i’ll let you know!

Sorry, my dear, but gelato and icecream have different ingredients; gelato is made 100% with milk, no cream at all; and ice-cream, well, the name tells you what it is. There are in Rome some gelaterias that make "gelato" with cream and milk, and even add food coloring, but that is not real gelato. Also, as you said, gelato is made slowly, so is more dense. That is why the real thing you never see it with mountains of "gelato" over boarding the containers. Unfortunately, there are "gelato"-makers who don't make 100% authentic gelato.
While gelato uses mainly milk, it can also use cream, just much less in comparison. It is still gelato. There are many areas that are making poor gelato for sure, which is why travelers should beware. I believe we are on the same page here 😅
