Blackout Brownies - 2 Ways - Inspired by Singapore’s Current Hottest Brownies

This is my attempt to recreate a brownie inspired by a popular bakery in Singapore that I've heard has people lining up outside its doors early in the morning to purchase bags of brownies sold at $75 per box of 12 pieces over this Covid period.
Reviews for it seem to fall into two solid camps with diverging opinions and which pique my curiousity.
Given that I am unable to get my hands on one here, I thought it would make a fun project over lockdown.
I hope that you do give this recipe a try and have as much fun as I did in the kitchen.

Disclaimer: I have never personally tried that bakery brownie before. All I can say is that I have done plenty of research but ultimately, that can never compare to first hand experience.

Just in case anyone is curious, I tried both recipes, substituting the Dutch Cocoa with hersheys Cocoa and it turned out fine and was still tasty! I still did use the extra dutch/black Cocoa though.
Omg! I made this with Nutella. It was amazing. Thank you so much. 😍 I tripled the recipe in order to get 12 brownies as my pan measurements are as follows 4.6 x 26.82 x 38.4 cm. Can't wait to try more of your recipes. Thanks.

Hi, I tried the fudgey version and really love it. This is one of my best bakes so far. I reduced the sugar to 45gm and the results is still amazing. Thanks for the fantastic recipe.

Made this today and it tasted great! My sis-in-law called it “no holds barred brownies.” My batter was runnier than the video and I got worried & left them to cook in the oven. They eventually set. Thanks for the recipe!

Just made the cakey one!! Used 20g normal cocoa powder (with little bit of baking soda) and 50g of caster sugar. was yums! the version w nutella was still a lil sweet for me but still really yummy!

Hi there, you're so talented! I've tried the Fudge & Cake Brownie version each once! The taste & texture are wonderful. However, I use my typical muffin tray and always end up not having enough batter to cover the toppings :( Can you advise the ratio of butter/flour to increase? I am also wondering if you can advise the recipe ratio if I want to make a bigger portion? Thank you!

Hi i tried this recipe and it was really good! its fudgy and has a slight 'crispy' layer on top when its warm. i cut the sugar to 80g and that was still sweet enough:)
the only thing to watch out for is to not crack the egg while the fire is still on cos that cooks it and also stir it enough so everything combines! that's it, enjoy:)

But I have one last question hoping to clarify with you. Why does one of the recipes call for cold egg instead of room temperature egg? Is it just to prevent the chocolate mixture from cooking and solidifying the egg?

Just a quick question, are these very sweet? I usually add less sugar when I bake as I don’t like things too sweet, but I don’t want to mess up the texture!

I just made the cakey fudge tonight. I used a scale and followed the exact recipe BUT my batter was not soft and silky like yours. It was DRY. Very DRY. So I added more water and plain Greek yogurt (butter substitute) and even avocado oil. I had to bake it 3-4 min longer. I also used sugar substitute but it was not sweet at all. I taste so much cocoa but not the sweetness.
Maybe next time I will try not substituting anything and see if it will turn out the same.

I just found black cocoa powder ,and thought of following your recipe.it turned out to be super good.blackness at it’s best ,probably won’t use black cocoa anymore, they tought I burned it.ha ha

Big question: if follow this exact recipe, how long can the brownies last before it spoils when kept in room temperature Tupperwares and/or when kept in the fridge? must baked brownies in this recipe be kept in the fridge even?

tried making this. the fudge i made was dense and... fudgy and had a bit crispy top hehe. i am not sure if i made it right. the cake version was def lighter. i like the fudge better but can only eat 1 slice as it was too rich

just to check: do you wait for your butter+sugar mixture to cool before adding egg? I’ve realised that sometimes, adding egg to a hot mixture causes the egg to cook which results in a different texture, so i’m not sure which method to use. Thank you! I hope you answer :)
Hi, I don't usually let it cool. I add the cold egg in directly. The key is to ensure you mix the egg in until it emulsifies and comes together like in the video :)
