Hey Mark, I am Hong Kong local guy, next time when you try the bamboo noodle without soup one, you will find that one main dish noodle with one soup, when you try the noodle put some soup into the noodle, it can make it a little bit wet, the orange sauce(chili sauce) is for you to taste the beef with that sauce together.

This brings back great memories for me. I served in Hong Kong with the British army from 1982-1984. There was a great little Punjabi club mess restaurant in Chunking Mansions called the Sher-E-Punjab, it only had a few seats but the food was always fantastic and great value for money. It used to be on the sixth floor I think, but now it has moved elsewhere in the building. I was always spoilt for choice of great food in Hong Kong. Going native with food always yields the best meal experiences. 😋👍🌟

I have been blessed to travel around the world. Twice to China, People by the millions and God loves and created everyone, everywhere. Thank you Mark, I feel like I am travelling with you, remembering these places. In Shanghai we did an evening river cruise to see the lights on harborfront. Just beautiful high buildings. Electric light show.

I would drink the black tea with lemon without sugar. I eat a lot of noodles, Hong Kong never disappoints. Even hazy the HK skyline is beautiful. The city is well organized to have so many people.

The razor clams is eye candy. If you go to Hong Kong again, try Mak En Kee it's off of Jordan Street Metro Station, make a right and a left up the hill. They serve wonton noodle soup in a small bowl. The noddles are extremely crisp. The restaurant is always busy and fancy cars nearby. Your New York City coverage was awesome, try Big Wong on Mott Street, famous for wonton noodles and barbecue meat dishes with rice. Happy eating.
Mark, the wonton soup noodles are usually eaten with red vinegar and chili oil. I was told the vinegar is to balance out the alkaline in the noodles. Watching your video makes me want to re-visit Hong Kong. Thank you for showcasing all the "little guys", they are hidden gems!
