Chef Lucas is the best. I really enjoy how he emphasizes how complicated some techniques are and then breaks down why the chef is doing what they are doing. It's easy to see something like grilled pork and take for granted how each part of the process is important to achieve the desired texture/tenderness/taste.

I live in NYC and have seen and eaten plenty of cha siu but this looks divine. you can tell the quality is not quite the same in nyc. Would love to try it for myself one day

Looks delicious. Back in the 60s and 70s here in Connecticut, many Chinese restaurants made a dish called Char Siu Ding. How I loved it. Sadly it is no longer made.

I’ve eaten cha siu at least once a month all my life and last week I tried cha siu made with pork neck and it is now my new favorite.
