I made this for my family reunion this year and everyone was very impressed. All my relatives thought that it was purchased from a fancy French bakery. Thank you Bruno for helping me steal the show this year :)
I remember the first time I saw this...
I was in middle school and used to watch the Great Chef's of the World. I was so mesmerized. This is simply AMAZING and beautiful as always.
I made this for the wedding of my sister, took me a lot of time (12h) since I'm only a chef and not a confectioner, but it was fully worth it!

It is similar to how Gordon Ramsay also has difficulties to tell directions without making it sound strangle. Only, it's hard when English is not your first language, yes? What matters though, are the baked result.. I still understand what he says.

Thanks Bruno, I made this Croquembouche (without the nougatine) and it ended up pretty well, but it was a total disaster making the vanilla Mousseline, the butter was low quality so it ended up chunky and lumpy and I could fix it and it ended with the consistence you had in the video, but I will say that this recipe is amazing and I would totally do it again

Can I make the nougatine a day or two in advance?
Shane Bournival you can make nougatine 2 weeks in advance but it has to be stored in a very low humidity area or under warm ovens like they do in bakeries.. 😊
