Not really a game changing thing, but saves a lot of time: Asset Usage Detector. Right click on an asset, select the "Search for References" option, and it'll show you every objects in every scenes and every scriptable objects that uses this asset. Very simple, but very efficient.
A relatively new asset that is really neat is Soap ( scriptable object architecture pattern ). Highly recommend to simplify and accelerate development !
Great list! I use Easy Save 3 and I like it a lot. It does the job of saving and loading data well and saved me the time of implementing my own. I also use ootii for printing out debugging messages on the game screen, as opposed to the Unity console, Zenject for Dependency Injection, and Rewired for game inputs (highly recommended, it works well with any controller you can think of and it has good support). There are a few others, but those are the ones I like best and would recommend to anyone, for any project.
Another one of my favorite tools is Pixel Crusher's Dialog System for Unity. I found it a little difficult to use at first, but once I integrated in to my project it's very powerful. It has a ton of integrations too.

Never could get the hang of Easy Save, TBH; but maybe that's just down to not spending enough time trying to learn it. Final IK, PuppetMaster, and Gaia are among the assets I snapped up during sales and then never took the time to even try them out in any meaningful way; maybe that'll change in the future. Three of my all-time favorite assets not discussed here are DoozyUI, DoTween (and DoTween Pro), and Modern Procedural UI Kit. And while this probably won't be of use to everyone or even most people, I absolutely fell in love with GreenBugGames' "Burned Wood" art pack.
😶Being new to Unity (but experienced in Godot) I keep finding myself feeling lost. Your videos are the best, by far. Do you guys know any discord server or community that focus not only on making great games but also on having great, clean code?
Easy Save is great, but buyer beware, if you are putting your game out on Switch, it is NOT compatible and will cause your build to crash. You will have to build some sort of interface to Nintendo's API as no one at Easy Save will dare help you for fear of reprisal from Nintendo.
My thoughts are: most of these tools should be implemented in Unity by default a long time ago. UE for example has almost all of them included right out of the box for free! I'm not using UE because I don't like Blueprints (not to mention C++) and I like C# coding but the truth must be said - a lot of typical (life improvement) features are missing and you have to pay extra by buying assets. Assets in UE by default: RayFire, Final IK, Astar Pathfinding, Volumetric Fog, Easy Save, Gaia, etc. Let's add to this PCG, Behavior Tree, etc. This is not good :(

I work with UI a lot and for me TOP-2 are DOTween and Procedural Image. Great time savers.
